It’s time for a quick check-in…
Below are all of my low carb meals for Saturday, plus my MyFitnessPal food diary so you can see how I logged those meals.

Saturday’s Low Carb Meals:
I was so tired on Friday that I went to bed at 5:30pm, lol. I got up at 1:00 and had breakfast around 3am I think…
I made sausage and 2 eggs scrambled with colby jack cheese in real butter:
I made enough sausage for a second meal, so I still have that to eat.
For lunch, I made beautiful buttery crisp blueberry pecan crepes. 🙂
I used 2 ounces of cream cheese, 2 large eggs (mixed with a hand mixer), 35 grams of blueberries, 1/2 cup crushed pecans (60 grams) and a dash of cinnamon – and fried them in real butter.
It made 6 low carb crepes (2 servings) for 8 net carbs total (4 net carbs per serving) and 88% healthy fats. I still have the 2nd serving left too, so I’m going to use those to make “sausage crepe sandwiches” today. 🙂
For dinner I got a low carb style Frisco Burger from Hardee’s:

It’s officially Fall here in Tennessee now.
Our temperatures are finally cooling off after an unseasonably warm start to the season. I’ve been thinking a lot about “what’s next” for my fitness adventures – like longer hikes, waterfalls in the snow, and… camping! 🙂
What’s NOT in my Food Diary above…
I had rum & diet coke last night – probably 12 ounces of diet coke and 2-3 shots of rum. Zero carbs, but drinks usually cause what is commonly called “the alcohol stall” due to the fact that alcohol takes much longer to metabolize than food.
No worries of course, and it was nice to have a few drinks for the first time in almost a year! 🙂 It was a nice quiet night with some great tunes, my fitbit, and lots of dancing.
That’s what I call FUN fitness, lol.
One thing to note about drinking, though: alcohol hits you MUCH harder and MUCH faster if you’re in ketosis. So drink less than you normally would, and drink slower – to test that out. You should also eat first, and know what you plan to eat next, so you don’t make unhealthy food choices when you’re a little tipsy.;)

Yum. Rum and coke
I have been drinking red wine occassionally. It also is good for us. I only drink one glass but it does seem to stall weight loss but hey…..it’s worth it soetimes. π
I might try the rum and diet coke next time. 0 carbs is good

I like wine too, but I like the zero carbs of rum & diet coke – and it tastes SO smooth. It goes down far too easy π lol.

Hi Lynn, I have company from New Orleans and we have been having rum and coke every night since Thurs. Granted, I have diet coke with very little rum, but I am still having my drink too, and its good. Yesterday we went to Ruby Tues. and I had the salmon Caesar salad, Yum Yum. I fixed a roast Thurs in the crock pot and had green beans. I have 2 slices of bacon for breakfast with 2 eggs usually or your “Cereal” Today we are having pork tenderloin. I feel good that I am staying with this woe even with my company!
I love your TN picture. We live in a beautiful state! And, who were you with last night having your rum and coke? Hope it was a fun night! hehe

We really must get together since we live so close. I’ll work on putting some meetups together. That would be fun! It’s been awhile since I’ve done one…
I did hang out with a good friend. I’ve been reaching out to my great friends lately, and have a girlfriend coming in for a sleepover & hike later this week. π It’s nice to reconnect with some of my favorite people. Life is so full and everyone stays so busy, but making that time is a priority right now.;)

I made tacos for my son tonight and taco salad for me. It was a nice change. I made it through the weekend and still eating lchf. I struggled last week but I am through it I think. Woo hoo.

I also am loving your Tennessee adventures, I live in the valley and you have brought my attention to a lot of beautiful hiking places I’ve overlooked! I’m really enjoying the low carb lifestyle! Thank you for all you do in helping make this so easy to follow! I’m a carb lover and never thought I could follow this lifestyle but because you keep it so simple there’s no way to fail if I follow your lead! I’m using a lot of your meal ideas and a few recipes from dietdoctor.com. Weight is down about 3.5 pounds this week! Thanks again for all your support and be safe in your adventures!

I am thrilled to find your site. Everyone shares great recipes and encouragement.
I have been successful with LC and was down 75#. Have had some creep back up with loosening the reins and so am getting back on plan.
I am wanting to really focus on the macros. I stay pretty close to 20 net, but my fat is not as high as the 70% to aim for. Need to tweet this a bit as I am in ketosis, but the scale is stuck.

You’ll find increasing your fat to 70% minimum (even close to 80%!) will really help a lot. It makes a big difference! That and keeping it simple, very few ingredients and simple food choices (real foods) helps with weight loss too.
