Join us for the Fall 2016 Low Carb Challenge!
After a day of “low carb comfort foods” like a sandwich, pepperoni pizza, chocolate chip cookie, and sweet juicy berries… I’m surprised I still feel so lean!
My weight is at an all time low of 138.2 pounds though, and even with the low carb junk food I was still at only 20 net carbs and 1275 calories for the day. 🙂
I’m actually surprised my weight is dropping right now with all the “low carb products” I’ve been testing lately…
I’m certainly not complaining though! Those low carb pancakes were the BEST. Those would have even been worth a pound or two – maybe, lol.
I broke a good sweat on a quick walk with my great dane yesterday too. It wasn’t as much exercise as I would have liked, but it was a full day and my only goal for the Fall Fitness Challenge is simply to exercise daily – whether it’s a serious sweaty workout, simple strength training, or just getting out for a walk.
Here’s a quick walk-through of my meals & macros yesterday…
Tuesday’s Low Carb Meals
I enjoyed my favorite healthy low carb breakfast. 🙂
It’s 1/2 cup pecans, 1/4 cup Daisy brand cottage cheese, 4 small diced strawberries and 17.5 grams of blueberries = 6 net carbs and 85% healthy fat.
I finished off the Low Carb Pizza for lunch. I made it with the Great Low Carb Pizza Crust. It came as a pack of 2 crusts. I think I’m going to bake the next one with butter & cinnamon, then top with cream cheese & berries. 🙂 That sounds SO good!
I fell asleep early, then woke up hungry in the middle of the night and made this big yummy low carb hot turkey & cheese sandwich on a low carb tortilla:
It could have used some lettuce, tomato & pickle… but it was after midnight. 😛
It’s Oscar Mayer sliced turkey & colby jack cheese. I layered it all up and heated it in the oven until the tortilla was crisp & the cheese was melted – then cut it in half & added mayo.
I had one of the chocolate chip cookies yesterday too, made with Good Dee’s Mix. They’re good, but I definitely prefer the brownies better! I have two packs of the brownie mix, so I can’t wait to make more of those. 🙂

The weather has FINALLY cooled off here in Tennessee so I’m looking forward to more walks with Slim (my great dane) now. I would LOVE to make it out daily with him, so that’s a goal. I just need to make it a habit again – weather permitting. 😉
I also want to do my easy strength training & muscle building home workouts daily, since those take such little time – and don’t depend on the weather. It feels good to be back to my daily exercise routine!

curiosity question on the tortilla you used. It says 1 small yet i thought you used two for the sandwich? is this because My fitness Pal had a different count than the actual product? I have found that my fitness pal can have so many different counts for one particular item, it tends to throw me off sometimes.
Ah, sorry for the confusion. It was just one Tortilla as you can see in the picture where I made & baked it. Then I cut it in half and doubled it into a sandwich. π
I just find the MFP entry that is accurate, according to my own labels. For foods without labels, I double check them by this list: https://ndb.nal.usda.gov/ndb/search
Hi Lynn!
I followed that link for the pizza crust. Never having been to the netrition site before I have to ask if this is typical of them? For product price it gives a range rather than an actual price. The description says 2 net carbs per serving but doesn’t say what a serving is. There’s no mention of the size of the pizza crust. There’s no list of ingredients. There’s no blow up available so we can actually read the label for ourselves. All in all I found that very frustrating so I guess I’ll just keep on with my own version of low carb pizza.
Have a happy!
TT
Hi Tye! A serving is half a crust. The one I got and the one I linked to is a 2-pack of 7″ thin crust. To answer your question – no, that’s not typical. I get ALL of those details on their site every time I go to order…
I can see the ingredients, nutrition facts, serving sizes, prices, etc. Maybe something is going on with their site, because I can’t even get it to load this morning. π
Oh wait – you just have to make a selection, choose one of the options, and then it shows the price and nutrition facts and ingredients, etc. π
Well that makes more sense. I didn’t realize they had more than one size. I’ll have to go back and look again. Thanks Lynn π
Did you like the low carb pizza a lot???
Hi Linda π I liked the low carb pizza crust for convenience for sure. I whipped it together super quick and I think it would be better with quality cheeses (like fresh asiago & parmesan) and more meats – I’m thinking sausage and bacon and mushrooms and green olives would really top it off. π
It was good though. I have one more and I’m going to attempt a “dessert pizza” with that one, so stay tuned!
