Yesterday I decided to try the Low Carb Bread Mix from LC Food Corp. They have several mixes, but I chose the one that’s easy. No yeast, no kneading, etc. You know me, the quicker the better -lol.
And when I say easy, this is literally something a kid could make. No kidding. It took about 5 minutes prep, 15 minutes to cook, and I had a big hot batch of low carb bread ready to eat! 😀
It turned out beautiful, as you can see in the picture.

I took the ready made Low Carb Bread Mix and mixed it with butter, oil and 6 eggs in a large bowl.
I thought I could mix it by hand, but ended up pulling out my electric hand mixer to get the batter good and smooth.
You can use this mix to make a loaf of low carb bread (in a loaf pan), rolls (in a muffin pan), or you can make hot dog & hamburger buns in various form pans.
I decided to use my muffin pan and make rolls. I greased the pan (with butter) and poured in the low carb bread mix. I had a 12-muffin pan, but the way these rise you could easily make at least 18 instead of a dozen…
They cooked evenly, and browned perfectly in just about 15 minutes. I let them cool for a bit, and then they came right out of the muffin pan with ease – no sticking!
I wondered how easy they would be to slice, given my experience with the texture of low carb bread in the past. I was able to slice a roll open WITH A BUTTER KNIFE with no crumbling or tearing. Impressive!
This low carb bread mix has a really nice texture. It’s not crumbly or coarse at all, and very moist. I might describe it as slightly spongy (in a good way) with the texture falling somewhere between white bread and true southern cornbread (without the crumble).
It’s great for dipping, spreads, and of course perfect for sandwiches. I made little mini turkey & cheese sandwiches with dill pickle. It was quite filling, given the size of the low carb bread rolls I made, so two was enough!
Next I tried it with Philadelphia Whipped Cream Cheese, and Polaner sugar free raspberry preserves. YUM! 😀 (So good I’m having it again for breakfast this morning)
I let the rest of the low carb bread cool completely, then put them in a gallon Ziploc bag lined with a paper towel, and stored them in the refrigerator. Now I can pull one or two out anytime, warm it up, and enjoy! 😀

I just had two for breakfast, warmed up in the microwave and topped with Philadelphia whipped cream cheese & sugar free preserves. They fared well overnight in the refrigerator – didn’t dry out or get soggy. And they retained their texture even after being cooled and microwaved. Nice!
Seems weird to say ‘low carb’ and ‘bread’ in the same sentence, but they do look delicious! Yummm.
Even with the little amount of carbs that they do have, those carbs would be burned up quickly if you have them after a short workout or walk. Some carbs are allowed as a post workout feeding (meal).

They’re very tasty, super low carb, and with the 6 eggs – high protein. I may try crumbling some up later to top a vegetable casserole…

Very cool – I’m so glad you’re joining us! π I am working off the original low carb diet for the most part myself (Atkins, early 70’s). I simply aim to keep my intake at less than 20 net carbs a day.
There’s no way I could have maintained the diet if it wasn’t so EASY. That’s what I love most about it!
I just wanted to comment that I think LC Foods Corp provides excellent customer service. I recently purchased some products from them (using the coupon you offer!) I had a question regarding the way one of my baked goods turned out. They replied in about 30 minutes with a suggestion for a different product to try and explanation as to why it may have turned out the way it did. Good customer service like that is hard to come by and I will definitely be a repeat customer because of it!

I made my third loaf of LC Pan Bread this weekend. I sent off my order for two more packages this morning. Its a great deal with the coupon. This bread is so filling that I eat less when its part of my day, and it adds to the variety of my LC lifestyle.
For you southerners………. I am going to try making a pan of this in an iron skillet with some bacon drippings. I bake it free form on a cookie sheet now, and there is something about the crust that reminds me of cornbread. If this works, the whole south might go LC. π

I’m surprised that you and others have commented that they like this bread mix – it’s not at all bready, either in texture or in taste. I’ll pass, thank you; there are LC ready-made breads available from a couple of different outlets (one in Florida, one in California), and even though I have to pay to have mine shipped to me, it’s worth it – my taste buds aren’t fooled by this stuff, and if it came right down to it, I’d rather have no bread at all than this. Yuck.

Which of the ready-made low carb breads do you prefer? I actually liked these rolls, especially to slice and broil with butter & garlic, or to slice and make mini open-face sandwiches. Are you referring to Julian Bakery, or are there other good sources?
Julian Bakery in California makes the best tasting bread, but they are flakey in their shipping practices, so I order from Sami’s Bakery in Florida; their 7 Grain Fiber bread has only 2 carbs net per slice – see http://samisbakery.com/our-products/low-carb/low-carb-7-grain-fiber-2/#. Haven’t found a decent bagel yet, though.

I know this is an old post, but I just recently read that Julian Bakery and Sami’s Bakery have been proven to be selling MISLABELED LC bread. Their products have been tested and they lied on the label. Just an FYI. There are many articles out there about it. Beware!

There are some great looking bagels made by a customer who used the LC flour. I have only used the Pan Bread mix because I am more of a bread shopper than a bread baker, but I am going to try the bagels. I like the LC Pan Bread because its quick. I have made some modifications to the recipe. I use a cup of grated cheese and a dollop of sour cream instead of the butter and oil. This doesn’t make a cheesey bread. It does improve the taste, in my opinion, and when baked in a buttered cast iron pan, gives you a great crust. I also bake a cottage loaf with this mix by baking it free form on a cookie sheet. I like rustic, artisan type bread. You won’t get a slice of WonderBread with the LC Pan Bread mix. If you are a light bread baker, I would try using the LC Flour with a more traditional recipe.
Just starting low carbs because of health problems. The doctor suggested that my husband and myself go on the low carb diet. So we are new to this too. I am open to suggestions. Thanks.
