Join us for the Fall 2016 Low Carb Challenge!
Happy Monday! 🙂 We’re kicking off the 4th week of the challenge, and it’s time for the 3 Week Weigh-In.
If you’re participating in the Challenge Facebook Group, use that link to post your weigh-in. Otherwise you can leave a comment here on this post.
Below are all of the low carb meals I had yesterday, plus my MyFitnessPal food diary so you can see exactly how I logged those meals.
I hope these live examples prove helpful for you! 🙂
I had an “off” day yesterday – off schedule and busy, and basically just ate when I had to and grabbed whatever was easy & convenient. I meant to cook this weekend but it just didn’t happen, lol. Some days are like that though, right?;)
Sunday’s Low Carb Meals
Every morning I slice frozen berries for my favorite low carb breakfast.
Did You Know: Strawberries and blueberries are both rich in antioxidants. Strawberries add fiber, folate & vitamin C to your diet. Blueberries have powerful antioxidants that help slow aging and minimize inflammation. 🙂
The more I learn about blueberries, the more I love them! And that’s already A LOT.:) Mine are hand-picked, then frozen.
This is my favorite low carb breakfast. I call it “low carb cereal” and I eat it almost every morning – because it’ has PERFECT macros.
It’s 1/2 cup pecans, 1/4 cup Daisy brand 4% cottage cheese, 4 small diced strawberries and 17.5 grams of blueberries. (6 net carbs and 85% healthy fats)
I cannot stop eating this low carb granola from Netrition, lol. It’s SO good!
This is the Low Carb Nut & Flax Cranberry Granola (1 serving, 42 grams, 2 net carbs) with pecan halves (30 grams) – only 3 net carbs total. This was a yummy snack!!
Later I made a quick lunch of my leftover Caesar Salad in a low carb tortilla wrap.
This is the La Tortilla Factory wrap. I’m not totally in love with them. I prefer the Mama Lupe’s brand of low carb tortillas.
For dinner I had a big bowl of my low carb veggie stew. It’s made in an alfredo chicken broth with broccoli, cauliflower & yellow squash. You can see the recipe/details here. It’s SO easy to make! Last time I used chicken & spinach in it, which was great!
Here’s My MyFitnessPal Diary for Sunday:
Calories: 1316
Net Carbs: 23
Total Carbs: 58
Protein: 31 Grams
83% Fat, 10% Protein
Water: 64 ounces
I haven’t weighed in yet myself because I’m off schedule, but I’ll do that later today (after I sleep again). I had one of those “hungry days” yesterday where I just seemed hungrier than usual. That usually happens right before my weight drops again. 😉
Have you ever experienced that??
A lot of people have been asking me for a printable version of my daily meals and favorite low carb recipes. I’m working on that for you! Stay tuned. I’ll email you as soon as it’s ready for download.
How are things going for you?
It’s day 22 and we’re kicking off the 4th week of the challenge. 🙂 How are you doing with your low carb meals & macro tracking? Any questions or struggles? I would love to hear your results so far.
Don’t forget to weigh-in, here or in the Challenge Group.
Leave a comment and let’s talk!

I actually am down a half lb. Today It has been difficult recovering from my cheats days last week or eating extra carbs a couple days. I finally got my weight down again to where i was before. Gee…..not doing the cheat meals anymore. It is so not worth it for me. I am on the right track again and i actually feel so much better when i keep my carbs down and it curbs my appetite as well
i can tell when i eat too many carbs that my unsatiable appetite returns as well.
i did have some sf candy yesterday. It was the Russel stover caramel pecan candy. The only problem i have with that is tummy issues. Hoping to have a good week.
i had the low carb cereal for breakfast and later had a lc everything bagel for lunch. That bagel is so yummy. I really like it and even better than the carby bagels because the texture is light and fluffy and toasts beautifully
it was excellent with cream cheese and SF blackberry jam
i love blackberry jam and fresh blackberries. They are super nutritious like blueberries.
That’s true – blackberries and raspberries are both great too! I need to get some more raspberries actually, I’m out…
I’m glad your weight is dropping again. 🙂 I’m still 139 pounds, for 2.2 pounds lost since August 1st so far. That suits me. I expect to lose very slow from here on out, and honestly… would rather be gaining muscle wait (or getting more tone/firm) right now!
I always feel that way after eating anything off plan and having to go back through the process, back into ketosis. I gain SO fast, and lose it SOOO much slower lol.
I can look back now and see clearly that is exactly how I struggled with my last 20 pounds – gaining and losing it over and over. I ate off plan at least once a month, or every couple weeks sometimes.
I think because I knew “hey, I can get right back on track and lose it again.” Which just kept me on a roller coaster of gaining/losing the same weight. 🙁
It feels SO good to be on track. I know you feel the same way! Our bodies just FEEL better. 🙂
Wow it must feel so incredible to be 139. I do not remember ever weighing that low as an adult. My weight fluctuated from 145-155 before i started having kids. I always felt overweight even though i was tall then haha. But i wish i weighed that again. I am getting there….slowly. haha.
If i was 130 anything i would feel so skinny. 🙂
I am happy for you. And 139 looks great on you
i am sure that a lot of that is muscle now. 🙂
Thank you, Gina! It feels ODD actually, lol. I haven’t weighed this since… I honestly don’t remember when. Sometime in my mid 20’s maybe?? It feels especially odd to see pictures of myself, see my reflection, or put on clothes I love and see them hanging off of me.
I do feel skinny. 🙂 But I’m also still grossly out of shape. Much better shape than I was a year ago though, which is GREAT! I’m making good progress. 🙂 Slow but good!
Oh – and I’m under 5’5″ – about 5 foot 4 1/2 inches I think. I shrunk from 5’7 which is what my height was last time I was this weight!
I Know!!!! What’s up with that? I used to be 5’73/4……almost 5’8. Now i am barely 5’6.
I still have long legs though. My spinal column must have shrunk or compressed with age. 😮
lol I’m long legged and short waisted (which is why weight is REALLY uncomfortable on me!). I have no idea. It happened in my 30’s at some point – totally stumped my chiropractor! I just realized one day I no longer had to buy “Long” in jeans – or that jeans were longer on me. 😛
Same here…..i am short waisted. I have always been all legs. I guess i do not have to get the long pants anymore either though the petite is still too short on me. 🙂
The one good thing about shrinking is that I can now wear heels – and not be gigantic. 🙂 haha. I have a whole new collection of 3-4″ heels!
I know!!!! I LOVE heels but i would never wear them before because the heels made me look taller than a lot of guys lol
Now i can wear them but i still cannot walk good in them cause of my bad knees. I do wear the wedges or thicker heels.
I wish i could wear the skinny or stilletto heels but id prob fall. Lol.

Hi Lynn,
I just ordered the LC Nut and Flax Granola in each flavor. You have a way of making everything sound so delicious! Can’t wait to try it.
You’ll LOVE the granola! 🙂
Hello Week 3! Well, I am down a total of 6.9 with a whopp’n loss of .2 this past week. I’m not at all disappointed, because I have learned that a loss is a loss! I still mess with my food choices and I’m finding more out daily! I don’t have the cravings or desire to eat carb loaded truck fulls of food anymore. I haven’t cheated at all.. Trust me temptation has been right in my face! No more mid night snacking.. I had switched over to snacking on pepperonis when I joined the challenge and started this way of eating. This week I have joined a Fitbit challenge and I’m going to work very hard to get at least 10,000 steps in per day and 30 minutes of activity. Thank you all for your support and ideas!
That’s awesome, Jennifer! 🙂
It’s common to experience very little weight loss, or even a “hold” and/or fluctuations during weeks 2-4. That’s totally normal. It’s just your body adjusting to the initial weight loss the first week or so. It happens to all of us!:)
Keep doing what’s obviously working while your body adjusts. You’re on a great roll!!
Day one for me…I am very tired and not hungry….is this typical. I just want to sleep
Hmm, I don’t think it’s typical. Maybe by day 3-5, when keto flu hits. Did you eat enough, and what did you eat?
