Here is my Low Carb Food Diary for Day 71 of the “Get Lean For Summer!” 90 Day Low Carb Challenge. It’s NEVER too late to join if you haven’t already!
Day 71: Monday’s Low Carb Meals
I had my favorite low carb breakfast again… because why mess with what works?! 🙂 I’m at my lowest weight yet! Plus it’s quick, easy and delicious.
It’s just 1/2 cup pecan pieces, 1/4 cup Daisy brand cottage cheese and 4 small diced strawberries. It comes to 5 net carbs and 85% healthy fats.
For lunch I took my leftover sausage & spinach that I fried up together, added 3 eggs and 1.59 ounces of colby jack cheese (cubed off the block) and scrambled it all up together:
That was easy – and good! 🙂 I couldn’t eat that much food at once so I ate half of it, and I’m having the other half for breakfast this morning.
I’d been craving the Low Carb Blueberry Crepes… so I made some for dinner. YUM! 🙂
My Recipe: 2oz cream cheese and 2 eggs blended with a hand mixer – plus 1/4 cup frozen diced blueberries folded in after. I also added a dash of cinnamon and a teaspoon of vanilla extract. I put a tbsp of real butter in a non-stick skillet over medium heat, and brown them in the butter on both sides.
I snacked on almonds late last night while I caught up on one of my favorite shows (Blindspot), and I drank A LOT of water yesterday!

I didn’t get much movement in yesterday, and I skipped my abs & arms workout after doing it two days in a row – to let my muscles recover a bit. I struggled doing it the second day, lol. I’m off to eat my leftover sausage/spinach scramble for breakfast and figure out what to get into today. 🙂
71 full days. I’m SERIOUSLY proud of myself. I’m more motivated, determined and EXCITED than ever to reach my goals!! I still have some pretty big hurdles and health goals, so stay tuned – I’ll be sharing those with you in great detail. Er, probably TOO much detail (lol).

If you don’t mind me asking – what do you feel got you OFF track? And what made you want to get back ON track?
Hi Lynn. Truth…your inspiration inspired me to get back on the wagon. However…that being said im having a hard time. I originally fell off the wagon after 2 years of absolutely no cheating. And the reason that happened is because after losing 28 lbs I started to gain. There was no big change in my eating habits but I didn’t move as much as I did when I first started losing. Then I got the flu and could only tolerate tea and toast. That was in March and I’ve been struggling since
It’s hardest when you first start (or start back) because you have to get back into ketosis – but once you do, all the cravings go away and it’s EASY. π
I wonder why you started to gain. Was it a lot, or consistent? How do you track? I ask because I accidentally ate too lean my first summer and totally stalled out then – until I realized I needed at least 70% of my calories in healthy fats. That fixed it!
It has been a very frustrating ride. I initially lost 28 lbs from.July 2014 to Oct. Then I more or less held at that loss for over a year before I started a steady gain. I did up my healthy fats…but kept gaining a quarter pound more or less every week. I upped my protein … I lowered my protein. Very frustrating. I’m 59 years old and not very active which I always vow to change lol. I have not gone completely crazy…in the past I would have gorged myself on cookies but I will not go down that road.
Oh … and I track with my fitness pal. .. and adjust net carbs myself

The only time my weight loss stalls for THAT long is if I’m out of ketosis – maybe having something off plan once a week or once every two weeks. Even just ONE cookie did that to me recently. π
I will try and install it. I’m not very tech savvy and I normally do everything on the Note 3 Samsung but I will try lol
The ironic thing is there was no discernable reason for my original stall and then gain. Literally I did not change a thing about my eating habits and menu. Not even on my birthday lol. I’d have an atkins bar while my family ate cake
That’s truly odd. Of course, the only real way to know would be to analyze the macros in detail – and the ratios or percentages of protein & fat (vs grams). When it comes to strange situations like that, you really have to do some testing & tweaking! Including giving up one food or type of food at a time for several weeks in a “clean test” (changing nothing else).
Well right now I’m trying my best to eat clean whole foods until I can get totally on track but it’s very discouraging. I bought the ab carver pro and I keep saying I’m going to get out and walk….your hikes inspire me…but…
So I get up in the morning with all good intentions…read your wonderful posts…and try my best. I have to stop being lazy lol
I get it, Jodi. It’s a “chicken & egg” thing I’ve found – for me anyway. I have to FORCE myself, but once I get “all in” … the motivation kicks in full speed right behind that. It’s just a matter of getting yourself kick started. π
