Happy Monday! 🙂 It’s Day 57 of the Spring Low Carb Challenge, and we weigh in every Monday morning. If you’re participating in the low carb challenge Facebook group, you’ll find today’s Week 8 Weigh-In thread here.
My current weight is 145.6, for a total of 9 lbs lost in the last 8 weeks. That means I lost another 1.4 pounds in the last week.
Averaging over a pound a week is a good rate of weight loss for me, considering I’m close to my goal weight (and post-hysterectomy). I’m pleased!
I started out close to 200 pounds, but for the last few years I’ve been gaining and losing the same 20 pounds over and over. 🙄

I had a weird food day yesterday…
It was super low carb, only one meal, but still around 1200 calories.

Day 56: Sunday’s Low Carb Meals
I didn’t feel like eating yesterday.
It was one of those days where I just wanted to take a day off from life. Have you ever had one of those days?! I didn’t feel like walking, I didn’t want to listen to my usual music, and I didn’t feel like worrying with meals. 😛
Nothing appealed to me. Even the thought of my favorite sugar-free hazelnut coffee creamer seemed overpowering taste-wise. Knowing I didn’t want that, and didn’t feel like eating… I decided to make my first Bulletproof Coffee in well over a year.
I had one large mug of coffee with a tablespoon of real butter and a tablespoon of Organic Extra Virgin Coconut Oil. It was delicious. 🙂
I didn’t use any heavy cream or sweetener at all, and it was perfect.
I had a second mug of coffee just like the first but with TWO tablespoons of butter, which gave me enough calories and satisfaction to get through the first half of the day. My third mug was JUST two TBSP’s of real butter (no coconut oil, nothing else) which was delicious too!
I may have finally discovered a way to eliminate the crazy amount of sugar-free flavored creamer I use every day. 🙂 That will be a BIG help because it adds up to 6 or 8 net carbs a day (yes, I drink too much coffee lol) – and it’s about $5 a bottle.
I did have 3 mugs later in the day with my Coffee-Mate creamer too, and finally had a meal last night. I made 3 eggs scrambled in real butter with colby jack cheese.
I still didn’t have an appetite, but felt like I needed something solid on my stomach – and eggs were bland and easy. See how my macros worked out for the day below…

We had some fun adventures, veering off our usual downtown track and exploring some historic sites and such.
I feel better today. Still no real appetite this morning so I got my walk in – which worked up an appetite for lunch finally. 🙂 Yesterday was just a bad day with a lot on my mind. Fortunately those always pass…
146.6 is almost a quarter of a pound lower than my previous “lowest weight” (146.8). Even better than that, my cravings are all but gone and I’m more consistent with my low carb eating and my exercise & fitness than ever before. That feels GREAT!

Hi Lynn, I was planning on trying to do a combination of LCHF with 16/8 Intermittent Fasting which I have read pairs well with each other. What I was curious about is your opinion about the bulletproof coffee in the mornings which is part of my 16 hr fast where I usually just have regular coffee. I’ve read so many conflicting opinions that I’m not really sure what to believe. Lol. I’m afraid that any calories in will negate the fast but if I understand correctly, the butter and oil won’t interrupt ketosis. I just know that I’m approximately 100 lbs overweight and approaching age 40 with a huge family history of diabetes and I’m having a hard time managing my blood pressure. The doctor keeps having to raise the dosage on my bp medicine. So……I realize that I need to get control of my weight and fast before I start having more health issues. My son is 17 so he is usually on the go quite a bit between school and his job so I very rarely cook anymore since it’s usually just me at home which is why I loved your blog as soon as I came across it. You try to simplify things as much as possible. Thank you. BTW, I too am from the great state of Tennessee.

I’m glad it’s helpful, Glenda. π I’m in Middle TN but host low carb meetups all over the middle and East areas of the state, so stay tuned – it would be great to meet up and share a low carb meal!
My advice: Just keep it simple to start. Eat 20 net carbs max, 70% fat minimum. The fasting is hard, I get headaches when I don’t eat, and it’s just not necessary. If you eat a healthy ketogenic diet, the weight will come off without all that stress. π
Try that first. If you eat 20 net carbs or less, and 70% fat or more, you can eat as much as you want or need to feel both physically and emotionally satisfied – and also feel GREAT.

Hi Lynn. I had a good LC day today. Breakfast was 1 1/2 pieces of bacon. Water. Coffee with hwc and French vanilla flavoring, lunch was 2 all beef hotdogs / water. And I just had 4 hot non breaded wings from Walmart. They did gave a sauce on them probably not good for me but they were yum! And water! I’m trying to be super good because we cooked a whole hog Friday night and I feasted on more than the swine Like home made desserts and wonderful sides and a beer or more I started to invite you and Joe, I don’t live that far from you , but I forgot, sorry. Anyway, that’s over and on to a new day. I bought my stuff for bpc but my butter is not grass fed But it is unsalted. So, I will give it a try in the AM. It’s kinda scary putting butter in your coffee. I need some energy! So, I hope the coffee helps!

I use salted butter in my coffee. π Mine is Land ‘o Lakes brand (not grassfed either lol). It tastes delicious!!

A ketogenic (low carb high fat) diet is a natural appetite suppressant, so that’s totally normal. Congrats on the weight loss!!

I love bp coffee….keeps me full!!! Tennesse is so beautiful!!! I hear ya about having one of those days, ive had one of those years lol. My passed away in Sept and I go thru times where I just cant get it together and I just don’t care ya know! !!But, I’m trying to do better and focus on my health, he’d want that π

I’m so sorry for your loss, Diana. I’ve had a lot of heartwrenching grief in the last year too, so I know exactly what you mean. I think it’s a great focus to consider what he would want for you. And you know… when everything else in your life feels nutty or out of control, it really does help to have ONE thing you CAN control. For me, that makes all the difference in the world! It keeps me grounded, and keeps me from spinning out of control with the craziness of life. π *cheers*

Thanks for the info, Lynn! I just now tried my coffee with a tablespoon of butter. I don’t think I can do it. It just had a greasy texture to me which isn’t how my coffe should be…..in my opinion. Lol. I’m in East TN in Athens which is about halfway between Knoxville and Chattanooga.

lol Glenda, it’s definitely different! I do find it keeps my lips smooth and soft. π haha. I use a hand mixer to mix it well which seems to help, but it does get kind of icky when your coffee cools down. π
I’m meeting so many neat people in Tennessee lately! Stay tuned – I’ll be hosting more meetups soon, and it would be great to get together and share a low carb meal. π

Glenda, I just tried the BPC , literally right now, and I used 1 tbsp butter and 1 tbsp coconut oil, artificial sweetner, and hot coffee. I blended it in a Ninja and it became frothy like a coffee house makes I can drink this! Mine is better than I expected.

Ok, I was in a hurry to go to work so I didn’t go to that extreme. Lol. I just dumped a tablespoon of butter in the bottom of my coffee cup and brewed my coffee over top of it from my keurig and let it sit long enough to melt before I drank it. Lol

I think I’m going to go with the butter only in my coffee when I get back from this trip. That’s one of the tough things about “BPC” – it’s hard to make when you’re traveling. π
