Then yesterday was a BIG FAT FAIL in the kitchen! 😛 lol…
I honestly don’t know what I did wrong, either. I’m going to share the recipe & how I cooked it with you in this post… so let me know if you can help me figure out how to fix it!
You are ALL much better cooks than I am. 🙂 My kitchen sees the occasional “science experiment” and is otherwise only used to make coffee. 🙄 haha
In addition to the TIME it takes to shop and cook, the mess it makes of my kitchen does NOT appeal to me – at all.
I really enjoyed the stuffed mushrooms and low carb crepes this week though. And the sausage biscuits are a favorite. Those were great, and EASY! It’s definitely nice to have low carb foods made up & on hand for super quick meals.
Okay, on with the meals – and the big fat fail in my kitchen, lol…
Here is my Low Carb Food Diary for Day 48 of the “Get Lean For Summer!” 90 Day Low Carb Challenge. It’s not too late to join us if you haven’t already!
Day 48: Saturday’s Low Carb Meals
For breakfast I just threw together a plate of snacks. I didn’t really feel like eating, but needed food. Hungry, but no appetite – weird I know.
Anyway, I grabbed 2oz of Oscar Mayer rotisserie chicken slices, 1oz of colby jack cheese off the block, and an ounce of salted almonds. That came to 3 net carbs and I just snacked on it while I was working.
For dinner I had a 1/3 Pound Low Carb Thickburger from Hardee’s. I usually order it plain with cheese & mayo, which makes it zero carbs. It’s on their menu, but if you order it like it comes you’ll get ketchup and all kinds of other carbs on it.
Now for my lunch… lol.
I had good intentions. I did, really. I think you’ll agree. 🙂
This is Karen’s fault by the way! She mentioned a waffle iron, and the very next day I was gifted with a brand new waffle iron! Thank you, Joe. 🙂 I was really excited.
Of course the first thing I wanted to toss in this beautiful little Waffle Iron thingy was my amazing crepes. Here’s the original recipe: Low Carb Blueberry Pecan Crepes.
Here was my thinking: I’ll make my low carb crepes, but I’ll make them into waffles instead, then I can make up A BUNCH and freeze them – like Eggo Waffles – and just pop them in the toaster anytime I want one!
I thought so…
Crepes turned Waffles turned What-The-Heck?!
This time I decided to make raspberry crepes instead of blueberry. And since the blueberry crepes were so great, and I really love (LOVE) raspberries, I thought… I’ll use double the berries in this one! Then they’ll be VERY BERRY WAFFLES.
🙂 haha, I had such high hopes for this recipe!
So I started with the original recipe and doubled the berries – using 1/2 cup of raspberries instead of 1/8 cup of blueberries. Wait. My math sucks! LOL, I just caught that – so it was 4x the berries instead of double. 😛
My blueberries were also slightly frozen, while the raspberries were pretty thawed – and MUCH juicier. I think I just figured out this recipe problem. 🙄
Anyway… I used the hand mixer to blend 2 eggs and 2 ounces of cream cheese (with some cinnamon & vanilla), then folded in the berries & crushed pecans.
It came out the prettiest shade of pink! 🙂
Knowing low carb crepes are a very thin batter, I put this in the refrigerator for awhile to let it thicken up some – hoping it would not be too runny for the waffle iron.
I was skeptical about this from the start. Will the batter be too thin? Will they stick to the waffle iron? I don’t have sprays, so I decided to put a tablespoon of butter on each iron then close it and let it heat up…
That may have been too much butter? 🙂
Anyway, my batter thickened up nicely but I started with a small amount (1/3 cup of batter) to avoid a huge mess. I figured it was going to run everywhere… but it didn’t!
Unfortunately they didn’t hold together. 😐 AT ALL
I had a really hard time getting them out of the waffle iron. They were total MUSH! I finally had to take the irons loose and dump them on a plate. 😛
I decided to use a hot skillet for the rest of the batter, since that worked perfectly last time. Nope! FAIL again. What the heck?! They fell all apart in the skillet too. 😯
So yeah… this was my lunch, lol:
This is the stuff that never makes it into the cookbooks, lol.
Hmm. Unless I call it “Raspberry Pecan Hash” – lol, there’s an idea!
Obviously that was A LOT of food (more than it looks like). It was over 1,000 calories. I ate half of it for lunch, and finished the other half later in the day.
It tasted good. 🙂 Regardless of how weird it looked, lol…
Now that I realize I quadrupled the berries instead of doubling them (DUH), and in hindsight realizing raspberries are MUCH juicier than blueberries – I’m guessing that was the problem with this recipe?? Yes?

I had to MAKE myself do my Ab Carver workout yesterday, but I was really proud of myself for DOING it. You can’t say your goal is “to get in amazing shape this year” and then do absolutely nothing to make that happen. 🙄 So yeah, I did it (want to or not).
See this picture of me? That was me in the kitchen yesterday. 😛 LOL. There’s nothing glamorous about it. And the burn marks on the potholder behind me… yeah, that pretty much sums it up! 🙂 haha
I look kinda cross-eyed in that picture. I’m not really cross-eyed in person.
That reminds me of something I should share with you…
You have fire alarms in your house, right? I guess everybody does, or should. I definitely should (lol). Anyway, the things start beeping after awhile. So what do you do? I just take them off the wall so they stop beeping. Smart thing to do, hey? 🙂
After a year or so ALL of the fire alarms (and there are A LOT of them all over my house) eventually ended up in a pile on the table in my kitchen. I had good intentions (I have a lot of those) to replace the batteries and hang them back up.
But as life goes and the way time always runs short and such… somehow it didn’t make the priority list. For quite a long while.
A couple months ago when I was sick and had fever, I kept waking up in sweats with night terrors. Some of them were really silly. One recurring nightmare was about all those “dead” fire alarms. I literally woke up in a sweaty panic over it.
So one night I got up at 3am, ticked off about waking up to THAT yet again, and hopped on Amazon.com and ordered a bigass box of batteries. There. 😛
As soon as the batteries arrived, I replaced every single one.
I was so proud. 🙂
I have no idea how to hang them back up. I honestly don’t even remember where they all go. I’m sure I can figure it out. But for the last couple of months… they have all been sitting on top of my refrigerator.
The good news is they have fresh batteries and they work. The weird thing will be the day they ALL go off together at once from the top of the fridge. 😛
Because this happens a lot when I get frisky in the kitchen. 😉
I need to hang those babies back up.
It’ll be more steps on my Fitbit, lol…
Tomorrow I may test my waffle iron with plain crepes. No berries, no nuts.
Or use the original recipe with frozen blueberry bits.
