I decided to cook last night. Shocking, I know! (lol) That means I have a fun, easy one-skillet-meal idea to share with you today. 🙂
As I mentioned in my last food diary, I just got back on track after the stomach virus – and I’m already down 2 full pounds. Yay!
I also got in some great exercise this week so far. My abs are sore! 😛 Here’s an update, with yesterday’s complete low carb food diary…
Tuesday’s Easy Low Carb Meals
I started the day with my usual low carb breakfast – but in in smaller portions. This time it’s 1/4 cup daisy brand cottage cheese + 1/2 cup crushed pecans + 3 diced strawberries. I stir it all together into “low carb cereal.” 🙂
It is 6 net carbs & 487 calories (filling!) plus 85% healthy fat – so a nice low carb high fat breakfast of healthy real food.
By lunch I was on the road to take my son home, so I stopped for a low carb fast food on the way. I got a Low Carb Thickburger from Hardee’s (it’s on the menu!).
I actually ordered a double – “make it a double please, plain with cheese & mayo” is how I ordered it. That makes it zero carbs. 🙂

He’s just a little “scooby snack” to my great danes 😛 lol…

I came home and rested a bit, and woke up HUNGRY. It was pouring down rain, and I didn’t feel like getting out anyway, so I rummaged around in the freezer to see what I had on hand. I pulled out a bag of frozen cauliflower and some Johnsonville smoked sausage. I like it because it has no fillers, and because the package is much easier to open than most brands. 😛 It also comes in two individually sealed sections – so I put one away for later.
Here’s what I made – it’s smoked sausage and cauliflower:
I steamed the frozen cauliflower first, salted it, then added about half the bag to the skillet with a tbsp of real butter – and browned them both hot & fast. Yum!!
I saved the other half of the cooked cauliflower so I’ll probably have that sometime today – with something. Who knows what, lol. I ate about half of that for dinner, and then I finished the rest of it before I went to bed.

I didn’t exercise on Monday, but I did reach my 10,000 steps goal on Sunday and Tuesday. I’m totally addicted to my Fitbit. 🙂
I absolutely love when it vibrates on my arm at 10,000 steps!!
Seriously, nothing has motivated me to start working out more like my FitBit Charge HR. 🙂
I was on the road for more than 4 hours yesterday, and also on Sunday, so that’s where I got my workout in. I’ll explain…
I’m a big multi-tasker. I don’t like wasted time, AT ALL, so I try to make the most out of every minute I have. Including drive time!
I do what I call CARdio, or CAERobics – lol. I jam to my favorite tunes and literally dance while I’m driving. Not just with my arms. I mean that I DANCE. Yes it looks funny. Yes I’m sure people stare (haha). I don’t care. I’ll have to get a video of this so you can see what I mean. 😉
I was short a few steps (almost 1,000) by the end of the day, so I decided to finish it off late last night. Just because my Fitbit addiction motivates me to hit that 10k mark!!
I hopped up and did The Charleston (remember that dance?!) to one of my favorite indie bands: Group Love. 🙂 FUN!! I danced until I reached 10,000 steps and broke a decent sweat. It felt great!
I lack 4.3 pounds getting back below 150, which I am aiming to reach before I head to San Diego on Monday. Can I do it? Stay tuned and find out… 🙂
