My trip was a lot of fun and full of great low carb foods to enjoy, but it’s nice to be home this week!
I have no idea yet what’s on the menu for today, but here is my low carb food diary for Sunday and Monday, since I’ve been home…
On Saturday, we stopped by Sam’s Sports Grill on the way back from the airport. I got a nice low carb lunch of ribs with no sauce (light rub) and steamed broccoli. I only ate a few bites because I was travel weary, and just lost my appetite, so I brought it home to enjoy later.
I made breakfast of those ribs on Sunday morning.
I just pulled the meat off the bone and warmed it up:
I had a late lunch / early dinner of tuna salad with pecans – just one can of tuna, Duke’s mayo, mustard, relish + 1/4 cup pecan halves. I was still tired from my trip, so I turned in early – but did have an Atkins bar before I went to bed.
Here’s how my macros worked out for the day:
Yesterday (Monday) I had an Atkins bar again, for breakfast – with my coffee, then had some pecans and colby jack cheese too. It was a busy morning catching up at work, and I had a lunch meeting where I knew I’d get to enjoy a big meal. 🙂
Lunch was at O’Charley’s, and I got the Cedar Plank Salmon (which is brought in fresh and slow cooked, not frozen) with “loaded broccoli” and steamed asparagus:
Delicious!! I cleaned my plate. 🙂
I love that their butter isn’t sweetened “honey butter”. I had the dollup of butter out of the bread basket as my “appetizer” while I was waiting on lunch -lol.
For dinner I had tuna salad again (with pecans).
Sometimes I get on a roll of stocking up on one thing and keeping it handy (like cans of tuna) just to make meals easy. I prefer variety to my low carb meals, but EASY and QUICK will win over variety any day of the week. 😛

I found some new t-shirts I really love this morning! Some of them are about bacon, some about fitness, and a couple are about danes & dogs. 🙂
I’m thinking take-out for breakfast this morning. Specifically fried eggs, bacon and sausage. 🙂 That’s what’s on my mind! What about you? What are you eating, and how are your fitness & food goals going?

Where do you purchase your pecans? They always look so fresh and good, but even in the south, they tend to be very expensive. And have you ever tried toasting them with a touch of butter and salt? Yummy! Thank you.

Hi Kathy,
I get them from the locally owned grocery near my house. They’re just “Best Choice” brand raw pecans – like you’d bake with. They are pricey, but I eat 1/4 or 1/3 cup at a time, so they last me. π
And yes, I’ve toasted them with butter & cinnamon too. Yum!
