3IMAX Challenge: Day 2 Low Carb Food Journal
For breakfast I had 1/2 cup Daisy Brand cottage cheese and leftover bacon. Super easy, and no cooking involved. I know what you’re thinking: What is leftover bacon?! Ha – I cooked up extra the night before when I had bacon & eggs for dinner, to make for easier meals the next day.
You’ll notice the shape of my cottage cheese. That’s because I scooped it out with a 1/4 measuring cup. Measuring is key for proper tracking! Often I’ll just eat my pecans or cottage cheese right out of the measuring cup itself. Less dishes, lol.
For lunch I used the last of the leftover bacon and scrambled it into two eggs with colby jack cheese. I had a busy day, so I just made something quick.
For dinner, I finally got to sit down and enjoy a “real meal”. We ordered out from a local pub that makes great “real food”. I got a HUGE hamburger steak with sauteed spinach and green beans. Delicious!
That was more than I could eat, so I saved the other half for lunch today. 🙂
I love having less of an appetite in ketosis!
My macros (nutrition details) for the day came out great:
17 Net Carbs
1213 Calories
63% Fat, 31% Protein
My goals are 20 net carbs a day (max!), with at least 70% of my daily calories in healthy fats. Ideally 75% fat, 20% protein. My numbers are never exact, which is okay. I do shoot for a minimum of 70% fat, but some days I’m a little under – other days I’m closer to 80%.
I hope that gives you some ideas for super-simple low carb meals, keeping it at three foods or less on your pate at a time. It doesn’t have to be difficult. You don’t have to LIVE in the kitchen or do tons of meal planning and food prep. I sure as heck don’t!
