January is National Soup Month so I thought this would be a great time to share some low carb soup recipes. These are great for diabetics, or for anyone on the Atkins or low carb diets.
Speaking of soup, not being a big cook myself, I keep Campbell’s Chicken Broth on hand. I love a big mug of hot chicken broth to sip on, especially when I’m sick – or just want something hot to drink besides coffee or tea, especially on cold evenings. Delicious!

One of the great things about soups is that you can easily make soup out of leftovers, creating a whole new meal. And soups often freeze well, making it easy to “stock up” and have a great hot meal on hand for later.
