I love sharing my low carb daily journals with you here, as it really holds me accountable.
I got off track there for a bit after the 90 Day Low Carb Challenge ended earlier this month, but not too bad. It wasn’t an all out binge, just a few comfort foods here and there while I was recovering from the flu.

Yesterday (Monday) I decided to get back on track, and back into Ketosis. The good news is that I haven’t gained any weight. I just haven’t lost any lately either. And now that I’m almost over the flu – I’m ready to make those scales move again!
Oh, and I joined a local gym! I’ve been going for a month or so, closer to two months I think, with a local friend. I was just paying for a guest pass there for the first few weeks and finally committed to an annual contract. I am LOVING the workouts. I’ve been going 3-4 times a week, but am planning to start going daily for awhile. It’s very convenient, and they’re open 24 hours – which is a plus.
To give you a quick update, I’m still stuck at 163 pounds. I’ve been in a major weight loss stall the last few months. The scales have fluctuated back and forth about four pounds since October, but pretty much always fall back to 163.
I’m guessing there are two culprits to my stall. The first being that I’m within 20 pounds of my “ideal weight” and the second being a prescription I’ve been taking regularly. Which hopefully I’ll be off of by sometime next month (February). But I’m determined to work out and eat super low carb until the scales DO move again! Worst case scenario I’ll be healthier and happier, right?
So here’s what I ate on Monday, which is the day I decided to kick myself back into Ketosis…
For breakfast I had coffee with heavy cream and Splenda. Then for an early lunch I had a leftover (delicious!!) Ribeye Steak with a small portion of leftover sauteed green beans:
Then as a late lunch / early dinner I had Gorton’s Grilled Tilapia from the freezer. Their Tilapia is GREAT by the way. Their Salmon, not so much. But I usually keep the Gorton’s Tilapia on hand in the freezer.
Later that night I had the toppings only off about half of a large Pizza Hut pepperoni pizza. My daughter had ordered it earlier in the day, and that made for a nice “indulgence” while I curled up and watched the rest of Bourne Ultimatum at the end of the day.
All super easy low carb meals of course. And it doesn’t seem like I ate very much yesterday, but I obviously ate plenty because I didn’t go to bed hungry!
I have no idea yet what I’m going to eat today. I seriously need to do some grocery shopping. I think I’ll just grab low carb take-out on my way to the gym this morning, and then I’ll figure it out from there…
