I weighed in at 170.6 pounds last Friday morning – a week ago today. I was disgusted, and decided it was high time to get back on track eating low carb.
I weigh myself at the same time every day, by the way. Your weight will fluctuate throughout the day so you’ll get a more accurate number if you make it a habit to just weigh first thing in the morning – whether you do it daily or weekly, or however.
Yesterday I weighed in at 166.2, and this morning I was 165.6 pounds. That’s a total of five pounds lost so far this week, since starting back on Monday. 😀
Honestly, this is a HUGE improvement, as I think I was on track for gaining about five pounds a week while I was carb-binging. LOL. Ugh. And I can feel it. It’s amazing what a difference even five pounds can make!
In my last post I promised to share photos of what I’ve been eating. Which, when I haven’t been eating out (which is plenty, lol) I’ve been keeping VERY simple. Here’s a quick run down of my week so far:
Monday / Weight: 168.8 Pounds
Old habits die hard, and on day one starting back on my low carb diet… I still wanted junk food. So I went to McDonald’s and got two Sausage Egg McMuffins and a large Iced Coffee. They put entirely too much cream in it, so I always order mine “light cream” (because they use half & half, which is higher in carbs than what I normally use). I wasn’t nearly as hungry as I thought I was, which is usually the case *laugh*, so I ate half of that for breakfast – and the other half for lunch.
Oh, and no worries on the “McMuffins” – my Great Dane took care of those!
His name is “Slim” and the name suits him, so a few little carb treats aren’t a big deal for him. 😉
I ate some leftover grilled chicken for “2nd Lunch” (lol), and then made Tuna Salad for dinner that night. An entire day of no cooking whatsoever. Yay!
Tuesday
On Tuesday I worked at the coffee shop in the city. They have beautiful pastry displays and make the most fabulous croissants, but I managed to order healthy – which they also do very well there!
For breakfast I ordered a regular coffee, and had scrambled eggs with spinach & provolone cheese – with strawberries on the side. YUM. I worked there longer than usual, so I also had lunch before I left. I ordered the chicken salad on a bed of fresh spinach, which was absolutely fabulous:
I was tired that evening, and had hardly anything “low carb” in the house, so I ended up making Tuna Salad. I topped it with Parmesan Cheese and had some nuts on the side. Simple, but it did the job.
Wednesday / Weight: 167 Pounds
On Wednesday I finally made a super quick trip to get groceries. Before I left though, I fried two eggs for breakfast. It was plain, but quick and easy – I had a busy morning.
For lunch I had Applebee’s Mild Bone-in Wings, followed by a Breyers CarbSmart ice cream bar. 🙂
I snacked on mixed nuts & string cheese in the early evening, but ended up eating a small bowl of Special K cereal before I went to bed. Why? I was starting to get relentless headaches and had trouble sleeping – among other symptoms that are common when I eat TOO low carb. While that’s great for super-fast weight loss, I really need my “feel good” energy right now to get through everything I have going on this week. I was still almost a pound lighter the next morning, so no major harm done…
Thursday / Weight: 166.2 Pounds
I woke up with another serious headache Thursday morning, but I did at least sleep better. I opted for another small bowl of Special K cereal for breakfast, and counted that as my total carb allotment for the day.
For lunch I had pre-made Tyson Beef Roast. Which is meant to be a few servings, but I ate the ENTIRE plate:
LOL – Yum. No sides, I know, but I did eat some string cheese on the side. I was going to make green beans to go with it, but decided on the meat & cheese given I’d eaten carbs already for breakfast.
I snacked on nuts & cheese again in the early evening, with big plans to make a nice big super low carb dinner later. That did NOT happen. LOL. I ended up getting a Thickburger from Hardees and just eating it without the bun. I ordered it with cheese, mayonnaise, lettuce & pickle. You have to watch things like ketchup, etc.
Friday / Weight: 165.6 Pounds – Five Pounds Lighter!
I’m off to several appointments again this morning, so I’ll probably just make a quick cheese omelet or something before I head out. My main goal today is to eat something green. 🙂
Oh, and by the way, I’ve been putting a dash of cinnamon in my coffee in the mornings. I put it in the coffee pot so that it actually brews *with* the coffee (which comes out much nicer than putting it in your cup after the fact). It gives me just enough of a sweet taste to totally curb my craving for junky sweets!

Good for you Lynn! One thing you don’t have to worry about is going hungry on a low-carb diet! I find that the only things I miss is pasta and an occasional ice cream. I’ll have to check out the Carb Smart bars; I thought the plain ice cream looked too boring and was too many carbs for me. Good luck on your journey back!

I don’t miss pasta when I’m actually eating “clean” (totally low carb). But I have lots of great replacements that fill that void. Alfredo sauce over grilled chicken or veggies, for example.

About once a week we have the Dreamfields Pasta. I know there is a lot of controversy whether it’s truly low-carb or not. But my hubby isn’t dieting and I have to accomodate him with some Italian food (our fav cuisine). I’ve tried the Carb-Smart by Breyers, very good, but like most stuff w/malitol and the like-it causes gastric problems for me.
I have read some low-carb recipes on the Lighter side website, nice stuff, but some recipes are soooo complicated, I get tried just reading them LOL!

I’m no good at complicated recipes. And as you’ve probably noticed, I rarely “cook” at all, lol. That’s what I love about the Low Carb Diet. I can still do fast food, take-out, room service and freezer foods, lol.
The Breyers CarbSmart actually uses Splenda, which doesn’t bother my stomach at all. I agree with you on the other sweets with Sugar Alcohols – I have to watch those. They can really upset my stomach. But Breyers doesn’t.

Congrats on seeing results so quickly. I try to eat low carb quite often but never, ever get results that quick. Wonder if I can copy your meal plan exactly for one week and be down 5 pounds too? Think so? Of course, I’d have to borrow Slim for the McDonalds breakfast day, I don’t think Wolf would eat the McMuffins! He’s a low-carb guy too, he likes MEAT not bread. LOL Keep us posted on your menu plan, that’s a big help! π

I’ll keep posting my food pics & meals here to give you some ideas. I don’t mention my drinks much – it’s coffee (with cream and splenda), diet coke and water…

WOW- just found your blog and LOVE it. Glad to see that I am not the only one who struggles with keep to the low carb restriction. I lost 30lbs and ever so slowly 15 lbs creeped back in a year. But back on the wagon (again) and will be reading your blog for that extra somethin’ somethin’ to keep on track.
