I stopped in the store yesterday to get some coffee, which I forgot (lol), and picked up a few low carb items to mix things up. I got string cheese (one of my favorite staples!), some thick sliced ham, and a jar of Tostito’s Creamy Spinach Dip:
This morning I made two scrambled eggs with ham for breakfast:
For lunch I heated up two slices of the ham in the skillet, dipped it in bleu cheese dressing – with a string cheese on the side. I was tired, and ready to nap, so this made for a quick easy lunch…
Dinner was cheesy broccoli! I ate half of it. 😀
I’ll probably finish off the other half later tonight, along with some ham dipped in that delicious spinach dip. 😉

I was really good today. For breakfast I had two fried eggs and a hamburger patty. Mid-morning I ate a protein bar. For lunch I had another hamburger patty and I just got done having a rib eye steak for dinner. My meals we not all that special, but I have had a very busy long day working.
Tomorrow morning I will fix a pork chop and eggs. For lunch I will most likely have a hamburger patty with cheddar cheese and dinner will be teriyaki chicken with asparagus and a salad.

That all sounds delicious to me! My meals are not all that special either (as you can see) but I prefer quick & easy when I am at home… and save my indulgences for when I eat out. My favorite low carb restaurant foods include seared tuna, grilled salmon, prime rib, etc. π

I often grab a Sausage Egg & Cheese McMuffin – and just ditch the McMuffin. Sometimes I eat two of them if I’m really hungry. There’s a local drive thru here too where I can get tenderloin & eggs (or bacon, sausage) if you have time to pull over and eat with a fork – or if you’re not driving. π
I also like to carry snacks. I’m not a big breakfast eater so for me something like almonds & string cheese (or pecans).

We had shrimp Alfredo sauce (homemade) over julienned zucchini noodles. Yum!

Oh, and for lunch I had leftover low carb meatloaf and mashed cauliflower. No breakfast, I’m afraid.

lol Not afraid. Just don’t always get to it. When I do have it I usually eat an omelet with sausage and cheese in it.

I am not a big breakfast eater myself. I usually eat it late morning, and may snack earlier on if I feel like I need to – often pecans & string cheese at my desk while I’m working. π

Yes, it’s amazing how stabilizing a few pieces of string cheese and a handful of nuts can be. I also sometimes eat that combo in the morning or at lunch, especially if I’m in a hurry and just need to grab something quick. The string cheese tastes even better if you let it get warm. Mmmmm!
I also like string cheese with a small apple (Gala – my favorite!), but that’s not as low carb. Still, the apple’s carbs and blood sugar effect are greatly improved by the string cheese.

today–had 2 tring cheese and some ham for breakfast–lunch an Adkins bar and snack some no sugar added rice pudding, not much as it is pretty high carb–dinner was a turkey burger patty, fresh spinich sauted in olive oil with garlic, a small Waldorf salad [1/2 chopped apple, about as much chopped celery, pecans, tossed with mayonaise] and just had 1/2 c low carb ice cream. I’m not trying to lose any more, just stay at 125 lbs. I usually eat one low carb tortilla at breakfast or lunch but didn’t today

The dip looks delicious! I meant to try it out last night but didn’t end up eating again, so I’ll have to “dip in” today. π I am not far from my ideal weight, so I’ll be in “maintenance mode” myself soon. *cheers*

This morning I had a bacon egg and cheese wrap. I layer a pan with cheddar cheese fry it, and flip it til the other side is done. It makes a perfect all cheese wrap. I then let it sit on a paper towel and add the egg which is cooked over hard and 2 slices of bacon, and I just roll it up. The cheese tastes so good, and you are eliminating a lot of the excess fat when it is fried in a pan.
Lunch I had a chicken breast drizzled with buffalo sauce and ranch!

Me too π I also like it “loaded” like a loaded baked potato, with: bacon, cheese, butter & sour cream. YUM! I also like it steamed and sprinkled with parmesan cheese. π
