Fluffy Low Carb Waffles, Chunky Cookies & Simple Healthy Keto Dinner

Keto SnacksIn my last food diary I shared a healthy low carb dinner, step by step and start to finish, plus two low carb breakfast ideas and a delicious (easy!) LCHF dessert idea.

In today’s food diary, which is for last Friday (January 26th), I had waffles for breakfast and cookies for dinner 🙂 with a nice healthy Keto Meal in between!

I usually eat pretty simple, to the point that a few readers have even complained about my “boring eggs & pecans” (lol) 😛 but I’ve been testing some new recipes & creations with interesting low carb foods lately…

Here’s what I ate last Friday, and how I logged it. Hopefully this will give you some ideas for mixing things up in your own kitchen!;)

My Low Carb Meals on Friday

I mentioned recently that I’ve been playing around with a Low Carb Muffins Recipe that also makes AMAZING waffles and pancakes.

What makes this recipe so interesting is that the main ingredient is nut butter! 🙂

As you can see they turn out golden brown, thick and fluffy:

Fluffy Low Carb Waffles - Simple Recipe with a Surprise Ingredient!

For this breakfast I tried another Legendary Foods Nut Butter and made Peanut Butter Chocolate Chip waffles. 🙂

Legendary Foods makes a variety of delicious nut butter flavors. They have a Nut Butter Sampler Pack if you want to try out all five flavors without buying full jars of each. *Our coupon code is: lowcarbtraveler

The Peanut Butter Chocolate Chip waffles turned out just as fluffy & delicious as the other waffles I’ve made with this same recipe. My favorites so far though is their Apple Pie, Blueberry Cinnamon Bun and the Pecan Pie Nut Butter.

I topped them with toasted pecans, real butter and sugar free syrup. Yum! ♥

Making PERFECT Low Carb Waffles

The waffles came out to 322 calories and 4.5 net carbs each, but let me just say: they really stick with ya! That’s a breakfast that will hold you over for awhile, lol. 😉

The directions are here: Low Carb Waffles, Muffins & Pancakes Recipe

For lunch: Spinach & Feta Chicken Sausage browned crisp, and two eggs fried in real butter over a bed of fresh baby spinach leaves.

I like to drizzle what’s left of the hot butter over my spinach too. 🙂

Healthy Keto Dinner Ideas

Baking Low Carb Cookies

I had a package of Good Dee’s Chocolate Chip Cookie Mix so I decided to make up a batch of cookies… and add Pili Nuts. 🙂

I love adding nuts to low carb cookie recipes or mixes because it makes a nice chunky cookie, and sometimes I’ll use salted macadamia or salted pili nuts for the “sweet & salty” combo.

You can also use pecans or walnuts. It also helps make them less sweet, and you get less of that “tingling cooling effect” with sugar free cookies when you add nuts.;)

Low Carb Products I Love

I love working with Good Dee’s Mixes and cooking with Pili Nuts!

We have coupon codes for both. See that ^ link for the 3 places to order & save on Good Dee’s Mix. For Pili Nuts use code LOWCARBTRAVELER for our discount.

Another reason I like to add nuts to low carb cookies or treats is for the added nutrients & healthy fats. 😉

They came out so beautiful it was hard to wait for them to cool off so I could try them!!

Baking Low Carb Cookies - with a Keto Friendly Cookie Mix

I made 10 good sized cookies at 182 calories and only one net carb each. 🙂

Chunky Low Carb Cookies - A Healthy Gluten Free, Keto Friendly Treat!

They were chunky, nutty & delicious – with the perfect cookie texture and the buttery soft crunch of wild-harvested pili nuts!

The great thing about these recipes is that you can use the ideas in your own creative ways with various types of nuts or nut butters for example, or with your own low carb cookie recipe instead of a mix, etc. 🙂

These look incredible. Getting it down to one carb is fantastic! KISS method coming through again! Thanks Lynn!

    • Lynn Terry says:

Thank you, Jordan – and YES, exactly! 😉 Plus it adds healthy fats and lots of nutrients, as the Pili Nuts I get are still being wild harvested from volcanic soil (and extremely nutrient dense!). Not to mention delicious. 🙂 I love a soft buttery nut crunch!

  2. Kesha says:

Thank you so much. Your advice about having chicken broth to keep away my leg cramps worked like magic. You ROCK!

  3. Donna B. says:

Lynn: I’m enjoying your articles so much. I started my lo carb diet on September 13, 2017.
I have now lost almost 19 pounds. I might add that this is with zero exercise. The photos and hints, and carb count on your website are greatly appreciated. I take these to heart and learn a good deal about eating out and your style of eating.
Thanks so much and keep us posted.
    Kindest regards ~ Donna B.

The cookies look great, but I don’t see a recipe. Is there a link somewhere to the recipe? Thanks!!
