Check In! Powering Through The Weekend? :-)

Keto SnacksSome people say that weekends are the hardest for them to stay on track with their healthy eating and low carb macros, so I thought I’d check in… and see how your weekend is going? πŸ™‚

I’ve had a GREAT week and am even back to doing my daily Tricep Dips, which makes me super happy!

Which is all because I could NOT open my jar of Pili Nut Butter last week, which did NOT make me happy. πŸ˜› lol

I have some cool news for you, plus I scored you a discount on the NEW Peanut Butter Keto Kookies (code: LOWCARBTRAVELER) but first here’s a quick photo tour of my low carb meals this week.

You can also see what I ate last weekend here if you missed my last food diary…

I actually cooked a little this week. πŸ™‚

My Low Carb Meals This Week

This week I made my low carb spinach biscuits which just use a few simple ingredients but come out GREAT. πŸ™‚ I really love easy low carb recipes, especially for quick breads like my low carb biscuits.

Low Carb Bread Recipes

I only made half a batch of the spinach biscuits and I added a little shredded cheddar because I was short on parmesan.

I was also out of parchment paper which is what I normally use, but I had some non-stick foil – both are great for quick cleanup and no sticking.;)

Those made for a delicious sandwich. πŸ™‚

I used Oscar Mayer Deli-Style Rotisserie Chicken slices and Duke’s mayo:

I had some great take-out this week too…

Including the Roast Chicken Bites Salad from Bojangles’.

It’s 14 net carbs for the entire salad, and 2 net carbs for their ranch packet.

Another great low carb take-out meal was this Grilled Chicken Taco Salad – minus the taco πŸ™‚ – from a Mexican Restaurant.

I ordered it with avocado slices instead of guacamole, mostly out of personal preference but also because I have no idea what they put in their guac.

Low Carb Mexican Restaurant Meal, Take-Out

Several people asked me how I track restaurant meals. If it’s not something on the menu, where I can look up the nutrition facts online to log it, I just log the individual foods in my meal – based on how much I eat, like this:

I couldn’t finish the whole taco salad so I had the rest of it – mostly chicken, avocado & cheese – the next day as leftovers:

I tried the new Peanut Butter Keto Kookies this week. πŸ™‚

This flavor JUST came out this month…

Peanut Butter Keto Kookie - Gluten Free, Low Carb Cookies

Yum!

Aaron and I had them plain one morning with coffee, and we both LOVED them. They are the closest thing to a traditional peanut butter cookie I’ve ever had – very soft and buttery and crumbly. πŸ™‚

I scored us a coupon code too! Go to Keto Kookies and use code LOWCARBTRAVELER for our special discount.

They were even better “dressed up” as a delicious dessert!

I topped the Peanut Butter Keto Kookies with cream cheese, peanut butter and then drizzled them with ChocZero sugar free chocolate:

Low Carb Dessert aka LCHF Keto Fat Bomb

Amazing flavor combination!!

That dessert above made for a great breakfast one morning. πŸ™‚

Other low carb breakfasts I’ve had this week include my usuals – like cheesy eggs. This is 4 eggs scrambled in real butter with colby jack cheese:

And my favorite “low carb cereal” breakfast: 1/2 cup of pecan pieces, 1/4 cup 4% Daisy brand cottage cheese and 4 small diced strawberries:

This was a very easy low carb dinner…

I had some steamed spinach left over from making the spinach biscuits, and some Tyson Grilled & Ready Chicken Fajita Strips. I tossed both in a skillet with some butter and fried those together – then drizzled Alfredo Sauce over it:

I used Pictsweet frozen sliced yellow squash and lined it on a baking sheet with olive oil and salt and cooked those in the oven to go with the chicken & spinach:

I made a delicious dessert using ChocZero Dipping Cups.

I love those things!!

I added half a TBSP of Pili Nut Butter to each White Chocolate Dipping Cup, plus half a serving of macadamia nuts. Then I topped each one (I made two) with another TBSP of Pili Nut Butter (half a TBSP on each):

Keto Candy, White Chocolate Macadamia Nut LCHF Fat Bomb

You can get the Pili Nut Butter here. I like Almond Butter better or natural peanut butter better, but the Pili Nuts are amazing. My favorite low carb nut!!

The ChocZero dipping cups make the best “keto candy” ever!

Some people call these Fat Bombs, but I love that you can use the cups as candy molds to make individual candies instead of making up a whole batch of something. Which is great for portion control. πŸ˜‰

You can see my Dipping Cup Ideas here.

I used the Dark Chocolate ChocZero Dipping Cup on the Keto Kookie dessert above too. ChocZero makes chocolate syrup, and I have some to try, but I love how the dipping cup chocolate sets up kind of like Magic Shell. πŸ™‚

Keto Friendly Low Carb Dessert Ideas

Aaron loved that ^ and also the “Turkey Sandwiches.” πŸ™‚

That was my favorite meal of the week too, so I’ll probably make more of the Spinach Biscuits this week. They’re great straight out of the oven too, or topped with a fried egg – so they work well for dinner OR breakfast.

Low Carb Biscuit Sandwich

I just got another box full of low carb foods to try, so I’ll give you all the details on that in one of my next posts – plus how you can get a FREE purple hand mixer.

Stay tuned for that! πŸ™‚

I’ve also been enjoying Chocolate Keto Coffee Shakes (VIDEO) a lot this week, and just supported their Kickstarter Campaign to bring individually sized packets to the market. I’m reviewing their entire 21-Day Kickstart Program too, so I’ll give you all the nitty gritty details on that soon as well.

Those two links ^ go to Facebook posts, but they are on my public page so you don’t need to be ON facebook or be logged in to watch the video or see the posts.;)

How are things going with you?

I would love to hear how your week went, and how you’re weekend is going. Any questions, or fun low carb meals & ideas you want to share?

Hey there Lynn any discount codes for the keto box?!? Thanks! And thanks for all that you do, all the time it takes to keep us posted! -Kay

    • Lynn Terry says:

      Hi Khalilah πŸ™‚

There are no discounts for The Keto Box or Keto Delivered (I’ve checked!) but you can usually get a discount as a first-time subscriber to the Keto Krate by signing up to their email list at: http://www.travelinglowcarb.com/ketobox πŸ™‚

The Keto Box sometimes offers a free gift when you sign up, and this time it’s one I really like. Though it usually always is! I’ll get photos taken and details for that together and post it in the next couple of days…

  2. Caryn Turner says:

Your ChocZero dipping cup treats ALWAYS look delicious! After you make them & set them in the freezer, do you store them in the fridge or keep them in the freezer until you’re ready to eat them?

  3. Anne Clinton says:

    Hi Lynn,

I’ve got a slow cooker for Christmas and used it this past two weekends. The first time I made pulled pork which was delicious. Just a pork shoulder rubbed in liquid smoke and pink salt and set it on low for 8 hrs. It was great on salads.

This week I’ve tried Mississippi pot roast. It was delicious on its own but again I put it on lettuce but I think it would also be good topped with two fried eggs and a dap of ketchup as a hearty breakfast. I won’t be be able to find the breakfast one out until next weekend because my carbivore family ate it all πŸ™

  4. Anne Clinton says:

    Mississippi pot roast:
    3lb chuck roast
    Ranch dressing packet
    Au jas gravy packet
    6 tb of butter
    Pepperoncini peppers 5-10

Cook on low for 8hrs or high on 5hrs
