As we kick off the year-end low carb challenge and prepare for the BIG New Year Challenge… ask yourself this:
Do I want to keep feeling frustrated and keep doing the off/on “dieting roller coaster” (which is maddening!) — or do I want to DO THIS once and for all and just SEE what it FEELS like to reach my goal? 🙂
December can be a tough month for a lot of people. Between the holidays and the weather it’s either super busy and chaotic, or a cold dark month.
Either way, having personal goals – something for YOU – is an ideal way to power through this month.
It will give you a grounding point, something positive to focus on that makes you FEEL GOOD. 🙂
If you focus on your healthy lifestyle goals this month, you’ll feel GREAT heading into the New Year. Most people are so run down, feeling down, and carrying extra pounds they hate by the time the New Year rolls in. But you do NOT have to greet 2018 that way this year! 😉
What Are Your December Goals?
We’re almost a week into the month already, but it’s never too late to set a goal and point yourself in the right direction.
That is exactly what I’m doing myself, because otherwise my mindset is going to go in the WRONG direction if I let it. Something positive to focus on, and something that makes me FEEL GOOD is a much better focus.;)
I’ll continue to eat low carb of course, which I’ve already been doing consistently. But this month I really want to focus on exercise, and specifically getting back to strength training with my quick & easy home workouts.
I also want to dig into some projects around the house: organization, decluttering, rearranging, and a few creative projects too (like my guest bathroom).
Both goals are things that will make me FEEL good, and also improve both the way my body AND my home look, giving me a nice sense of accomplishment too. 🙂
Of course I’ll get out hiking and for walks as weather permits, but December is a great month for “indoor goals” and I don’t want to let the weather keep me from exercising!

My Low Carb Meals & MyFitnessPal Logs
In my last food diary, I shared 5 full days of low carb meals with you.
I still don’t have much of an appetite but I’m getting plenty of calories with ideal LCHF macros. I’m actually thinking of incorporating some “liquid meals” into my diet as I get through this weird zero appetite phase – so stay tuned for more on that. 😉
Below are all of my low carb meals for the last two full days, plus my MyFitnesspal diaries so you can see how I logged everything.

Monday’s Low Carb Meals
I had to hit the ground running with work on Monday morning so I started the day with a quick snack of pecan pieces mixed with the Know Foods Low Carb Cereal – and just made a snack bowl out of it to eat at my desk:
The Know Foods low carb cereal is okay, but at this point I’m just trying to use it up. 😛 BUT, I got a great idea the other day to use it to make a Low Carb Bread Pudding! 🙂
I finally got a chance to get in the kitchen, and decided to make up a batch of my Low Carb Sausage Biscuits to last me through the day, considering I had to work late – too.

These biscuits are also gluten free, by the way – and made with very few and very simple ingredients. 🙂
I had two for breakfast hot off the pan, then two for lunch and two for dinner – both times with Sugar Free Mountain Berry Preserves. Delicious! 🙂
Attitude Adjustment: Cooking when you’re a single person eating alone means you have to eat the same thing for several meals, or worse: several days.
NO: it means I don’t have to share! 🙂 haha, Okay, I tried.

19 net carbs, 2061 calories, 77% fat
Tuesday’s Low Carb Meals
For breakfast I made a bowl of cereal mixing the Know Foods Low Carb Cereal with pecan pieces and Daisy Brand cottage cheese, with 18 grams of frozen blueberries – which added a nice sweet crunch!
That was actually good. 🙂
I finished my last two Low Carb Sausage Biscuits for lunch, warmed up and topped with cream cheese. Delicious!
By dinner I was tired and also “Food Bored” (which happens when you keep eating the same thing over and over! lol) so I decided to have a big thick fudgy Low Carb Double Chocolate Cookie topped with peanut butter. 🙂
That was a nice treat, and HEALTHY too! Those cookies are made with superfoods, all real food, gluten free and only 4 net carbs. But they’re LARGE enough to use as a meal replacement.
Tuesday’s MyFitnessPal Diary & Macros
21 net carbs, 1960 calories, 80% fat
I’m excited about my exercise goals this month, and more excited about FEELING the RESULTS! I find that quick, easy strength training exercises work super fast.
Things like Tricep Dips which you can do while HALF a pot of coffee brews, done consistently you see results super fast!
I’m also going to be working with Resistance Bands to build (er, FIRM!) my glutes and I use the Ab Carver Pro for a fast & easy core workout. I have a couple of workout programs on DVD that I really like too, so I may pull those out this month for some FUN ways to get both my heartrate AND my energy up. 😉
It was cold here in Tennessee today, but warmed up just enough for me to get outside and clean off my back decks – which also turned out to be some good exercise. 🙂 I’m off to do some more rearranging / organizing – with the music on, so I can get in some good Fitbit steps while I dance through my chores.;)

That’s great, Holly! I wish I had more time and interest for cooking. I think it would help if I learned to “cook for one” – and actually made it worth the time and cleanup. π
