Many of you have asked about my daily low carb food diaries, and said how much you miss them. I’m glad to hear that! 🙂 I always think they’re boring because I eat so simple. 😛 lol…
I’ve been VERY sick for something like six straight weeks now. Two waves of the flu back to back, turned bronchitis bordering on pneumonia. It’s been HELL.
I got to a point where I couldn’t work much, and simply SLEPT a lot, which meant I wasn’t sending out my daily low carb diaries here. But I stayed on track and on my usual macros (20 net carbs max, 70% fat minimum) – for as long as I could.
About a week ago (a week ago yesterday actually, I believe), I finally had to go off plan to straighten my stomach out – from all the antibiotics and over the counter meds I was on around the clock.
I’ll spare you the details, but the last thing I wanted to do was taken yet another pill (Imodium A-D, lol) or have a sick stomach on top of everything else. UGH.
So I come back to you now, not 100% well yet but definitely on the better side of this… and TEN pounds heavier. 🙂 😛 *sigh* I’m okay with that. I did NOT stress about it, I’ve simply focused on getting well – period.
It worked by the way (straightened my stomach out), but now that I’m done with the antibiotic and most of the other meds, I felt good about going back to my usual LCHF ketogenic diet. So I got back on track yesterday. And thank goodness, because I forgot how miserable bloating feels! 🙄
Here’s what I ate yesterday, and how I logged it…
Tuesday’s Low Carb Meals
I started back with a very simple low carb breakfast of cheesy eggs, which actually took me awhile – I still don’t have much of an appetite.
It was 3 eggs scrambled in real butter with colby jack cheese:
I wouldn’t really call this “lunch” – just “a bite to eat real quick” lol.
It’s an Oscar Mayer Smokies link (zero carbs) with yellow mustard. Someone on Facebook called it sad. I agree, haha. I just don’t have the energy to do much.
Fortunately I had dinner at a friend’s who was kind enough to make me a delicious low carb dinner. We had an 8oz thick cut boneless pork chop wrapped in bacon, with sautéed mushrooms & steamed green beans. And I ate it ALL. 🙂
Plus a rum & diet coke! Which had me in bed by 9pm, lol…

I’ve had zero energy for the last couple of days. I slept 9 full hours last night even, which is rare for me. I’ll probably just keep it simple today. For breakfast I had cream cheese & berries with some nuts. 🙂 But if I do get a spike of energy, I’m planning to make low carb blueberry pancakes for dinner tonight!
I just realized I didn’t have a single bite of chocolate yesterday, on Valentine’s Day. Wow! I did get some delicious looking chocolates in my Keto Krate box though, so maybe I’ll have some tonight. 🙂 How did your holiday go??

Your post was just what I needed today. I’ve been sick for 10 days and my wonderful father-in-law passed away suddenly Mon. evening. I feel awful I’m every way and am allowing myself a break with LC eating. I don’t have the strength mentally or physically to think about it right now. This is life and I will be back on track as soon as I can.

Thanks for being a real person with ups and downs. I have followed you probably a year and a half. During that time I have had ups and downs but the overall result is I weigh 25 lbs less and at peace with that and I get back on track rather than giving up. I love you are not a low carb chef focusing so much time on the kitchen, I can relate. Just want to say thanks!

Delighted you’re back and feeling so much better, Lynn! We missed you and worried about you. I didn’t have any chocolate yesterday either. Had been hitting the SF treats a little too frequently and felt out of control even though I stayed below 20 NC a day. So I promised myself I’d abstain yesterday just to prove I was in control and not the SF monster. Also missed my veggies as I was subbing SF stuff for them. Anyway, NSV!
Take care of yourself. Don’t do too much too soon. We depend on you and want you too be 100% well.

Thank you Cindi π I’m still sleeping A LOT. I cannot wait to get back outdoors for more adventures, and back to my strength training at home too – but I’m still not fully recovered and taking it easy.
I may try for a short leisurely hike tomorrow with a friend, just to test it out. π I miss the sunshine, and we’re supposed to have beautiful weather tomorrow!!

Hi. I just joined and paid for the one year premium membership. I’ve purchased so many Keto cookbooks this last year and most of them don’t include the nutritional breakdown per recipe. I lost 45lbs in 2016 in Keto and have another 25lbs to go. I’m very sedentary. Do you have any meal plans that I can download?
Also, I’m using Safari on my iPhone & iPad. How can I get the net carbs hack to work with Safari?

Hi Martini,
The plugin for net carbs only works online, not on the iphone or ipad.
When I make a recipe, I use the Recipe Calculator in MyFitnessPal to log those meals.
Congrats on your weight loss so far! I don’t do any meal planning, but I have tons of archives here in my daily food diaries with simple/easy low carb food & meal ideas. π

I experienced very low energy levels on low carb eating also…but! it was after I had stopped the combo B6/B12 injections! Aha!…didn’t have access to the injections, so I took a super B complex tablet and was so much better in just one day…The Bs are key! π

Glad you figured that out, Kit – because I feel MUCH better in ketosis than I do when I eat high carb! Of course the key is to get at least 70% of your calories in healthy fats – as that’s where your energy comes from when you limit your carbs so low.

Its nice too know im not alone in all this…i started keto 6 weeks ago and fell off hard on my 7th…i felt so guilty for days not to mention the bloating (which i think will make me think again when i want to fall) but its nice to know that hey im only human …thats for ur support!!
