It’s great to be back! My sites were down for about a week for major maintenance & upgrades.
And of course now my Low Carb Group is down, which we’re still working on. 🙄

I weighed in this morning at 135.6 pounds, a new all-time low for me. 🙂 I’ve been “hovering” around 137 for weeks on end. This time last year I was 156-158 pounds, and it feels GREAT to be more than 20 pounds lighter!!
I’ll share some of low carb meals from the last week with you to give you some low carb food ideas, whether you’re eating out or eating in. I’ve been staying on track, eating simple, and enjoying the results…
Low Carb Meals:
Lately I’ve been starting most days with this healthy “low carb cereal” which is a combination of delicious foods: 1/2 cup pecan pieces, 1/4 cup Daisy brand cottage cheese, 4 small diced strawberries and 1/4 cup (25 grams) of Chunky Musli.
One of my favorite low carb take-out meals is from Gondola Pizza & Steak House. It’s grilled chicken smothered with bacon & cheese, with roasted broccoli and cauliflower plus sauteed mushrooms:
I really enjoyed the two loaves of Low Carb Everything Bread, especially for a low carb grilled cheese – or in this case a grilled cheese with fried eggs on it. 🙂
I had a fabulous “low carb style” Chicken Brushetta meal at a local restaurant last week. It’s grilled chicken topped with mozzarella and tomato, with steamed broccoli and a spinach cream sauce:
This is the Chicken Brushetta on the menu. I asked for broccoli in place of the pasta, and no onions (I was on a dinner date, lol):
I attended a catered event at that same restaurant a few days before. They had a beautiful spread! I got grilled chicken and green beans, and topped my chicken with the spinach queso dip (spinach, tomato & cheese dip):
At another local restaurant, I ordered the grilled salmon with asparagus and sauteed mushrooms. I asked for alfredo sauce on the side, for dipping. 🙂 Delicious!
Oh, and my local Hardee’s is back open! 🙂 They have the BEST low carb burgers. My first stop there was for a low carb style (lettuce wrapped) Frisco Burger:
My girl friend Caroline came for the weekend and made low carb crustless quiche muffins. I’ll get that recipe for you. They were delicious! We had a great time with our danes, and also went out dancing – where she showed me some fun latin moves. 🙂
I wasn’t surprised to see the scales move down again. I’ve been eating healthy and staying active, and my clothes have been fitting looser lately. I actually wore a pair of SIZE FIVE skinny jeans when we went out dancing Saturday night!

Good to hear from you! Congrats on your new low! I’m at your same weight you were last year and it’s been a really bad mental struggle lately … this morning when I stepped on the scale to see 157 I thought…why am I even trying? I was 154.2 yesterday, ate very good and just don’t understand but…fluctuations are normal and I think my scale is a bit of an @$$hole sometimes too…my boyfriend said he doesn’t think it’s consistent either but I can’t blame that. I just so desperately want to meet my 20 lb loss for the year and be 153….and 140 is probably my main goal. Sorry, I’m being whiney like i seem to be so often but depression on top of whatever’s going on w/ me lately … just dragging me down and I want all of my efforts to finally get me where I want to be! Each day I try harder…each day I truly know “Why am I even trying” is because I’m not 173 lbs anymore….and I very well could and would be if I hadn’t changed my life with this WOE. I truly love it…and I’m not giving up. Just frustrated w/ the slow go of things.

Thank you, Amy. π I get that, because I have been through all of those comments in my own head. What has (finally) worked for me was to STOP dieting, hop off that dieting roller coaster and just: eat simple & eat healthy.
Even on weeks (weeks in a row, too!) that my weight doesn’t change or fluctuates up slightly, I say to myself, “Eat for your health.” And it helps like you said to remind myself I am NOT gaining, like I know I would.
The other thing, besides staying consistent no matter what, that has really helped me is to eat super simple. No complicated recipes, tracking super close, being very mindful about my food choices, real food as much as possible, and as few ingredients as possible.
I find that makes a BIG difference. You may have noticed most of my meals are 3 ingredients or less, or 5 at the most. Super simple – for a reason. π
I lose weight super slow, and I get the frustration… but this past year has proven just how WORTH IT all of the patience and consistency really is.

Good afternoon, well I made it back to the 1..’s yeah. Feel good, down 4 lbs since week 5 weigh in. I made the low carb sausage biscuits yesterday, a nice change, going to use recipe for holiday sausage balls. I have been trying foods from my first keto crate and they are good so far. I cut up some rotisserie chicken and added the lime mayo, was good on the flax crackers.. love the chocolates. Great treat in small quantities. So glad you are back Lynn, and congrats on new low

Congrats on your weight loss! You’ve been doing so great. I’m really glad to hear you are trying a few new things, and enjoying adding some variety to your keto diet. That makes a big difference, and keeps you from getting bored. π

So happy you are back…after 3 months stuck between 160-162, I finally broke into the 150’s. I wasn’t cheating either, but haven’t been this weight since 1980, so my body was just settling in. I’m 67, so probably will stop around d 150, but may take another year at this rate. Congratulations on your new low.

I find that to be the case for me too, Betty – my body seemed to “stick” at a certain “comfort weight” and I just had to ride that out until my body realized I was NOT giving up, lol. And it worked! π

I have a question, is it true you subtract sugar alcohols from carbs?

Hi Sherry,
Yes, if you are eating something with sugar alcohol you subtract that (plus any fiber) from the Total Carbs to get the Net Carb Count.
But make sure you test any sugar alcohol in extreme moderation. Some of them can really upset your stomach – and fast. π

Lynn – I’m just now getting to your post and seeing a couple of new things to try – yum!
It’s Christmas Day – Merry Christmas to you. And it’s thanks in part to you that I have just this morning achieved my goal of weighing in under 130 (129.8 to be exact) – woohoo! I started following you back in February at 178, so total weight loss is…. drum roll…. 48.2. I baked cut-out and decorated cookies with my 12 year old granddaughter this past week, and never once was I tempted to take a bite or even a lick of frosting off my finger. Today I’m hosting the family for Christmas lunch and we’re having turkey breast and rolls, green beans with hazelnuts, and others are bringing sides/salads. For dessert, everyone is bringing their Christmas cookies to share. I have some sugar-free cookies I made and froze earlier this month so I could take a few to each party I attended, and I have a few left for today and a few left for New Years Eve so I won’t feel deprived. Aged 65, wearing size 6-8 skinny jeans for the first time in my life – Life is good! Thanks Lynn!

My goal this year is to be very careful to listen to my hungry/full response. I do fine at home. It’s when I’m at work (everyone snacks in the afternoon) or at social events. That’s my “tweak” for the new year.

That’s a great “tweak” Karen. π It’s so smart to look at your triggers or weak points and focus on replacing those with something positive!
I do a lot of events and social situations, so for me it helped to change the focus from food… to fellowship. I’ll offer to serve, or hold a baby for a new mom while she eats – and focus on playing with the baby (they’re so cute!!), or get into a great conversation with someone interesting… and ENJOY those times SO much more now than when I used to only focus on the food. π

I was almost afraid to post my weight as I have been following a low carb diet for quite some time and am pretty close to goal. I am 137, my new low. I haven’t weighed this since before I quite smoking almost two years ago. I recently stopped drinking and it made a huge difference, the weight fell off. I had a habit (issue) of drinking on the daily and now I only drink on special occasions and try to keep my drinks low carb. Thanks for adding me and I hope to continue on the journey and add some exercise in 2017 on a more consistent basis.

I am about the same as you, not being new to it and being so close to a goal weight. The exercise makes a BIG difference in how you look and feel, by the way. π I started over a year ago, but my goal this year is to get REALLY serious with it!
