Here are all of my low carb meals for the last two days, plus my MyFitnessPal food diaries, to give you some easy low carb food ideas…
Sunday’s Low Carb Meals:
It was almost lunchtime before I finally had breakfast on Sunday morning. I made 3 eggs scrambled with colby jack cheese in real butter:
For lunch I made my favorite “low carb cereal” with 60 grams of pecans, 4 small diced strawberries, 1/4 cup Daisy brand cottage cheese, and 1 serving (25 grams) of Chunky Musli. (that stuff is SO good!!)
For dinner I just had some Rotisserie Chicken from Food Lion. It was so tender & tasty! Oh, and 3 shots of rum with diet coke. 🙂

Monday’s Low Carb Meals:
I was out running errands on Monday morning so I picked up a quick low carb breakfast at McDonald’s while I was out.
I just said: “3 sausage patties and 3 round fried eggs please.”
For lunch I made a batch of Low Carb Blueberry Pancakes, which makes two servings. They’re crisp, buttery, fluffy… and sinfully delicious!
I had the first serving with real butter and sugar free maple syrup.
I used a great low carb pancake/waffle mix with good ingredients.
I had the second serving (2 larger pancakes) for dinner. I just popped them in the toaster and the came out PERFECT. 🙂
I made bacon in the oven to go with the pancakes earlier, so I just made a Pancake & Bacon sandwich for dinner. YUM!

Here are some recent photos of me at a (very comfortable!) size 8. I am guessing I should go down to a size 6 in another pound or two, as my newest clothes are getting loose on me. 🙂
This weight loss journey has been so amazing, and such a HUGE transformation in so many ways – far beyond the number on the scale or the size of my clothes…
Getting (and staying!) consistent with 20 net carbs max / 70% fat minimum is the BEST thing I’ve ever done for myself. I feel better than I ever have in my life. Not just physically, but also mentally and emotionally. The dieting roller coaster was pure h*ll on me, and I regret that I didn’t hop OFF of that much sooner. 😛
I would give anything to go back in time and show myself a glimpse of what I would become, and how amazing that would feel. Gosh, I’d be content just to go back in time and HUG myself… and say “everything is going to be okay, you’re going to come out of this stronger and happier.”
Part of the journey though, is to learn the hard way.
Unfortunately, it’s the only way things really stick.

You’re my new role model and I’ve been lurking around for a while. I have stage 4 ovarian cancer so it’s imperative that I cut the sugar and simple carbs. When I lost my best friend last week I went berserk and yesterday ate 3200 calories and 230 carbs. Miserable today of course, I apparently haven’t ever gotten to that state where I lose my taste for junk foods. Question: on 20 net carbs are you getting adequate fiber? I’m not following your program so much to lose weight but feel less depressed and get rid of brain fog.

I’m so sorry to hear of your loss, Emily. My heart goes out to you. Grief is SO hard. I’ve been through my share of losses, and my new saying is: FEEL the void, instead of *filling* the void. That really helps me at least have one grounding point in my life where I’m not spiraling.
There are great low carb sources of fiber – vegetables and berries of course, as well as nuts and other low carb foods, so getting enough fiber is not a concern.
A ketogenic low carb diet (20 net carbs max, 70% fat minimum) will put you in ketosis, which burns fat for energy instead of sugar/carbs. It is also a natural appetite suppressant and makes your cravings disappear magically. π

Good morning, first let me say you look terrific and your attitude expresses your happiness. Congratulations to ALL of your accomplishments, you are indeed a inspiration. Well for me I was down 1 lb. I was expecting more but I’ll take anything in the right direction as a victory. Even though I am trying to limit added salt, my sodium intake is very high. I must admit I am a saltaholic but I have decreased my added salt alot. My protein intake was a bit low yesterday but overall it is good. Not really sure why my loss is minimal but glad to see it down anyway. My carbs intake has been right at 20 although I have been at 22 a few times. Well have a good week.

It’s normal for you to see a “hold” or even slight fluctuations after your initial weight loss. That’s just your body adjusting. You really want to lose slow and steady. A pound a week is 52 pounds in a year!;)
Sodium is fine on a low carb diet. You actually want to be careful not to eat low sodium, as this diet is a natural diuretic. If you don’t get enough salt in your diet you’ll experience leg cramps and headaches – or if you drink way too much water, as that flushes the sodium & electrolytes out of your body too fast. In either case, if that happens … drinking a hot cup of chicken broth is the fast, easy cure.
You mentioned your protein was low. It should be 25% of your total calories for the day – max. It’s okay if it’s lower, but you don’t want to consistently go higher.

I’m still here and still trucking along! My weight keeps bouncing up and down 2 lbs which drives me bonkers BUT daily I feel better and I keep noticing differences in my clothing so I know I’m making progress. I’ve been able to share this lifestyle with an old friend and she’s doing well with it. It’s great when someone actually takes the advice of eat all the butta and bacon it really works! Haha. And doesn’t just find ya nuts like some people do. π AlSo I finally got to make your sausage Parmesan biscuits this morning and they are amazing!! Thinking of making suasage balls out of it for our upcoming Christmas party at church. I don’t think anyone would be able to tell the difference! Anyways, have a great day and thanks for all you do and share with us all!

My weight is doing the same thing, Casey. I get it, lol – I just ignore it and keep eating my low carb foods and like you… FEEL the difference! The alternative is for me to bloat back up 20-30 pounds, so – no thanks. π haha
And yes, the recipe makes GREAT sausage balls! Smart! I love that you have a good friend to talk low carb with. I always find that so fun, and encouraging. π That’s what I love about having all of you here to eat with every day!

I am not at all happy with Keto Krate! I ordered a box. It was good and I loved the product. I have yet to recieve my second box! I have paid for 3 so far but have only gotten 1. I am continually billed but get no product. I have e-mailed them several times with no answer. Of course there is no phone so I can’t talk to someone to resolve the problem. I wonder if other people have had this problem? It is really pushed to get the keto box. I got it and am having problems. I would NOT recommend it to anyone else.

My husband just diagnosed as diabetic. Type 2. I am trying to figure this carb thing out. They do not want him to lose weight and say he should have 60 carbs per meal and 15 carbs at snacks. He sneaks foods with sugar or a lot of carbs in them. Then his readings are elevated and I am livid. Is there any sweet tasting dessert that is low in carbs. I have books (old) that talk about calories and exchanges but am told to look for carbs. I am overwhelmed. Please help!
