I have plenty of groceries in the house. There’s ground chuck in the freezer to make BBQ Spinach Burgers. There’s chicken breast thawed out to try a low carb chicken parmesan recipe with some low carb pasta I got in to review (to pair with the amazingly delicious Organic Marinara Sauce).
I have frozen veggies too – I was planning to make a broccoli asparagus casserole topped with cheese & crispy Cello Whisps.
That all sounds fabulous of course, but I’ve had a super busy week – and honestly just do not feel like cooking. At all. 😛
Fortunately you don’t have to be a master chef to eat low carb, and it’s easy enough to get by without even cooking. 🙂 Even with plenty to choose from in the house… I ended up calling in a quick low carb dinner from Domino’s last night.
I figured the 40 minutes I waited for that could be better spent doing something productive, instead of making a big mess in the kitchen.:) Besides, not only do I get dinner that way, I also get visited by a cute delivery guy. I guess that might be useful if I bothered to shower before answering the door, but oh well… ha!
Hmm, I guess I could have showered in that 40 minutes. You know what I did instead? I went shopping (online). 🙂 I needed a couple of smaller pieces of clothes to wear, which I personally thought was a much better use of my time than cooking – when Domino’s was more than happy to make my dinner, and even bring it to me!
I used exactly one skillet in the last two days. That is IT.
Here’s what I’ve been eating…
Thursday’s Low Carb Meals:
Confession: I’m addicted to the Chunky Musli we got in the last Keto Krate.
The musli is SO good in my low carb cereal! I ordered more on Amazon even (the larger bag is a better deal, just FYI). My cereal had: 1/2 cup pecans, 1/4 cup Daisy brand cottage, 4 small diced strawberries and 25 grams of Chunky Musli.
The musli adds so much texture & flavor to my “cereal” !!
For lunch I just made a simple cheesy scramble.
It was 3 eggs scrambled with colby jack cheese in real butter:
I wasn’t really in the mood for dinner, and actually thought I’d just skip it. But I ended up having a friend over so I made up a big snack plate for us to enjoy while we were chatting. I didn’t eat a lot, just picked at it really, but it did hit the spot.
Especially the Pili Nuts. 🙂
It was a simple snack plate with Oscar Mayer sliced rotisserie chicken & colby jack cheese rollups, mozzarella string cheese, salted almonds, raw pecans & Pili Nuts:

I didn’t eat breakfast until noon, so this is more like breaklunch I guess? 🙂 I did mention I was addicted to the Chunky Musli, right? lol… It’s SO good! I’m going to use it in my Almond Honey Biscuits recipe next I think, and make… Musli Muffins? YUM.
Anyway, my breakfast yesterday was a BIG bowl of healthy low carb foods: 1/2 cup pecans (60 grams), 1/4 cup Daisy brand cottage cheese, 4 small diced strawberries and 17.5 grams of blueberries, plus 25 grams of the Chunky Musli.
For dinner I called Domino’s and ordered 8 mild bone-in wings and a chicken caesar salad. I had the 8 wings and half a ranch cup and saved the salad for another meal.
And I did NOT bat my eyelashes at the delivery guy. I promise. 😉
Late last night I looked around the kitchen again. So many options. Meh. 😛
I just cannot be bothered lately – which I need to get over considering I haven’t eaten a vegetable since last Sunday when I went out to eat with Caroline! Oh well… I ended up just grabbing some pecans and string cheese.:)

At least I’m hitting my macros, even though I went over my “20 net carbs” by a hair both days. Blame the Musli, lol – that stuff is just TOO good!
I mentioned I did some shopping online last night. I seriously needed a new belt. I don’t even own one that fits anymore!
I love to shop the American Eagle Sales, and they have some great deals online right now. The jeans & tank (and the layered necklace too!) that I had on in my weight loss pictures in the last post were all from American Eagle, btw.

Morning, Lynn! I hear you on the lazy. My biggest culinary adventure is scrambled eggs. LOL I’m not a chef. Wasn’t before LCHF and will never be. Luckily, my husband is and is always asking me to give him recipes that we all can eat. Maybe someday. Ho Hum LOL We DO make spinach burgers and everyone in the house loves them.
I am definitely ordering that Muesli. One of my biggest problems with the low carb lifestyle is needing something dry and crunchy when my stomach gets sick. I know the Muesli is sweet, but it may solve some of the problem. I used to keep tiny pretzel sticks in my drawer and grab a handful but now that is not an option. I ordered some of the Flackers, but they’re not my cup of tea. If you have any other dry, non-sweet crunchy suggestions, as close to a low carb saltine as you can get, please advise.
And, BTW. . . . next time the Domino’s guy comes to the door, make sure you are showered and put on one of your Fabletics outfits. Then bat your eyes. You’ll be out on a date in no time flat, Ms. Hottie! 🙂

I like salted almonds when I need something like that quick. Sometimes a Peanut Butter Granola Atkins bar. The Cello Whisps are a great salty grab-it snack: http://www.travelinglowcarb.com/cello and hmm… a cup of hot chicken broth out of a mug too. I make a simple low carb bread out of almond meal too, but that takes about 10 minutes.:)
I do love the Chunky Musli. It’s not that sweet really, only slightly – but definitely not salty either. It’s great as a trail mix when you add salted almonds, raw pecans etc so that may work too. I make up ziplock bags of premeasured amounts of each. I reordered it on Amazon here: http://www.travelinglowcarb.com/musli but the larger bag is the one I got, as it’s the better deal.

I’m just curious how you were able to get the carb count on the wings that your ordered from Dominos?
Also I realize you say you don’t cook much but what will you do for Christmas? I am use to baking a lot of cookies and making homemade candies and realize that I probably eat the biggest percent of them but I don’t think my family will accept my not making all of the traditional goodies and yet I know for sure that I don’t think I’ll be able to resist.
I wish we could have a group discussion of good Holiday recipes and what others plan to do to make it through the holidays without falling off the wagon.
Another question in your cereal that you rely on and love, do you use frozen blueberries and strawberries, or fresh. I tried it but I guess I’m not fond of cottage cheese so I can’t say it hit the spot but I may try again with the chunky Musli.
I really enjoy you sharing your online orders; please continue to do so. I’m getting ready to order from Netrition and because of your evaluation of the Chocolate Bars I will now be sure to add them to my list.
Is there anything else that you highly recommend? I’m ordering the pancake mix? Which one is your favorite. I’m also ordering the bread; I think rye and the Everything, and the low carb taco shells. For the Domino’s nutrition facts, I looked those up online before I placed my order. I just googled “dominos nutrition facts” (or find them at their website): https://cache.dominos.com/olo/3_31_4/assets/build/market/US/_en/pdf/DominosNutritionGuide.pdf … then I searched MyFitnessPal and found an entry that was accurate (matched the nutrition facts).
For the holidays the children and I usually do non-traditional things because it’s just the three of us – I have a son and daughter, but no other extended family. One year we flew to Vegas for Christmas. One year we did a 4-day weekend in Chattanooga for Thanksgiving and had dinner on the Southern Belle River Boat. Sometimes we’ll do a holiday at home and I make crab legs and steamed broccoli. 🙂
For this holiday… what if you pass the torch? Assuming your baking/candies are gifts for friends & relatives, what about a nice recipe box with all of your usual holiday recipes as a gift instead? 🙂 That could be fun & creative!
I do use frozen berries. The blueberries I hand picked myself over the summer, then froze immediately. Otherwise I buy frozen berries with the berries being the ONLY ingredient. I find they don’t go bad on me before I can use them all up that way, plus they are much easier to dice up while slightly frozen. 🙂
Instead of cottage cheese you might try a low carb yogurt?

I always order wings plain and just whip up my own buffalo sauce in the microwave. Butter, hot sauce and if I want a little milder, some low carb BBQ sauce.
