I had very simple foods with easy low carb meals yesterday.
The only thing I actually cooked was eggs. Everyone is always asking me how I make my eggs, so I’ll share that in detail with you too.
I go through phases of being “sick of eggs” but I have really been enjoying them again lately, and they’re such an easy & versatile food!
Tuesday’s Low Carb Meals:
I had my favorite healthy low carb breakfast. 🙂 It’s 1/2 cup pecans, 1/4 cup Daisy brand cottage cheese, 4 small diced strawberries and 17.5 grams of blueberries. (6 net carbs and 85% healthy fat)
Lunch: 3 eggs scrambled with colby jack cheese in real butter.
I use a non stick skillet, turn it on medium heat (5 on my stove) and add 1 tbsp of real butter. I use about half ounce of cheese per egg, so around 1.5 ounces for 3 eggs. I cube the cheese (cut off the block) while the butter is melting.
I crack the eggs straight into the melted butter, add a dash of salt, scramble them together and toss in the cheese, then scramble until done (non stop).
My quick & easy low carb dinner: peanut butter on toast. 🙂
I used Low Carb Everything Bread. Only 1 net carb per slice!

Oh dear I let myself get out of control over the holidays. I gained 4 pounds but the worse of it is – back into Keto flu. I have fibro and have chronic pain issues. I learned how much better I feel when in ketosis, less inflammation, less pain. The memory of going thru this pain has kept me on program for almost a year. I didn’t “pig out” on Thanksgiving but did eat too many carbs and sugars.
So now it is back to on program. Today I have been in pain again, all over my body. Back to drinking lots of water to help flush these toxins out of my body. I have 1/2 of a pecan pie in my fridge, it needs to GO.

I totally understand. I was also in chronic pain prior to going low carb, and that plus keto flu are my best deterrents when I think I want to eat off plan. π
Fortunately you’ll be back in ketosis in no time! I’m guessing you already are. It’s a tough lesson, but I’ve made that choice too – and you just have to get right back on track and keep on keeping on.;) *cheers*

Ok. I’m ready to start this Lowe carb diet. I need all the help I can get. I’m five foot and weigh 156 UBS. I need to weigh about 125. I lost ninety lbs about 15 yrs ago with bypass surgery and I’m on my way up again and don’t want to. I need to do this for my peace of mind docter wants me to weigh at least 130. I’ve read ur story and it excites me. Ur a great example. Please tell me how to get started. HELP me I’m gaining!!!!! Thx so much

Hi Chris! I keep it really simple and just eat 20 net carbs a day. You want to eat low carb high fat, so it’s 20 net carbs max, 70% fat minimum.

The ketogenic diet is low carb, high fat, moderate protein which is exactly what I do myself: 20 net carbs max, 70% fat minimum.
