If you’re participating in the 60 Day Year-End Low Carb Challenge that started on November 1st, it’s time for the Week Two Weigh-In.
It’s never too late to join in! 😉
You can post in the group weigh-in thread, or if you’re not participating via Facebook you can check in here by leaving a comment below.
Below are my low carb meals for yesterday plus my MyFitnessPal food diary. I would love to hear what you’re eating and how things are going for you!
Monday’s Low Carb Meals:
I started the day with my favorite healthy low carb breakfast.
It’s 1/2 cup pecans, 1/4 cup Daisy brand cottage cheese, 4 small diced strawberries and 17.5 grams of hand-picked blueberries. (6 net carbs and 85% healthy fat)
I was out running errands in the afternoon, so I stopped at McDonald’s for sausage and eggs. I love that they have the All Day Breakfast menu now!
I just ask for “3 sausage patties and 3 round fried eggs please.” I usually only get two of each, but I was HUNGRY lol.
For dinner I had the Chunky Musli Cereal that I got in my last Keto Krate. I’ve eaten it by itself, and it’s GREAT as a snack or in a trail mix. This is definitely a product I’ll be ordering more of, because it’ll be great in a variety of low carb recipes. 🙂
This time though I tried it as “cereal” with Blue Diamond unsweetened almond milk.
The cereal is 4 net carbs for a 25 gram serving, which isn’t a lot. I used two servings, and also added 1/4 cup of crushed pecans – to add more calories to it.
I was hungry. 🙂
It was really nice to have a real “bowl of cereal” for a change!
I would definitely add diced berries to it to add more flavor.
The Chunky Musli alone is great, but unsweetened almond milk is kinda bland, so that took away from the flavor for me. But with berries it would be perfect. 🙂
Here’s My MyFitnessPal Diary for Monday:
Macronutrients: Simple Explanation Of Low Carb Macros
How To Get A Net Carbs Column in MyFitnessPal
Calories: 1831
Net Carbs: 22
Total Carbs: 36
Protein: 77 Grams
82% Fat, 14% Protein
Water: 24 ounces
The cereal made for something different at least. 🙂
I really prefer the musli as a low carb snack or mixed with other things into a “trail mix” type of snack. It’s DELICIOUS by itself, and such a healthy mix of low carb foods. Plus it has great macros.;)
It’s been nice to have a variety of low carb foods lately to mix things up. I was getting bored with my usual staples, lol. I have some great things to cook this week, so stay tuned for more food diaries!
I also have some FUN exercise scheduled this week, including an adventurous day with one of my girlfriends – so expect some fun pictures too. 😉
How are things going on your end?
How are you doing with your low carb meals & macro tracking? Any questions or struggles? I would love to hear how your day went, and what you decided to eat.

Good morning and happy weigh in. I am down 3 lbs this week and can’t wait to see 199, 6 more lbs to go. I must sayou it sometimes a struggle to eat the fats and still believe I can lose. But the truth is in the scales. I read your email everyday and love your food ideas. Some days I have a hard time reaching my fat and protein goals, I’ve even struggled a few days getting to my carbs goal. Not sure why I am eating and not hungry. Should that concern me alot?
Lynn Terry says
No Sherry, a healthy ketogenic low carb diet is a natural appetite suppressant. π If you eat low fat you won’t lose weight – or have any energy. It really is awesome isn’t it? I love all the delicious fats like pecans, avocado, salmon etc without worrying about it!
Susi says
Y’all- I’m sort of discouraged. I started on this challenge at 190. I am down to 183.4- but that is after being at 182.2 three days ago! As far as I know- I am staying on plan. So I guess this is just the way my body works. I have done well with Low carb- so much easier for me than low calorie because I am hungry all the time on WW. Just wondered if any of you have this up and down on the scale thing.
Thanks!
Susi
Lynn Terry says
Hi Susi – yes, the fluctuations are totally normal. π It can be hormone cycles (even men have those), water weight, muscle recovery after workouts, or any number of things. Just keep doing what’s obviously working!
Susi says
Thanks so much! Sure enough I woke up this morning to a 1.8 lb loss!!! So glad I didn’t get too discouraged! Thanks so much for the encouragement! You are so right- we know this works!
Lynn Terry says
I’m so glad, Susi π
Just remember that next time the scales aren’t moving or they’re fluctuating all over the place. It IS totally normal. Getting (and staying) consistent – no matter what – has been the key for me. π *cheers*

Hi Lynn,
My weight in for today is 141.6. I’ve lost 25lbs since the end of July. I really think you encouraging the use of Fitness Pal has made the difference for me. It made mindless bites stop and especially cut down on nut consumption (I love nuts!). I really resisted logging things, but now that I’m in the habit, I look forward to seeing my macros for the day.
I also pulled out all my size 14 and 12 pants to give away. My 10’s are getting lose and I wore a size 8 stretch jean very comfortably. It’s exciting but a little scary getting rid of bigger clothes, because I’ve been up and down so many times, but I feel like something has switched in my brain and this way of eating will stick!!
Question…I’ve been getting very bad “Charlie Horses” or legs cramps in the night, does that mean I’m low in something?
Thanks for your consistent encouragement…it’s been invaluable! Donna B.
Shannon Mills says
Yes add a multivitamin and additional vitamin d.
Donna B. says
Hi Shannon…
I’m taking “Bone Strength” which has Vitamins & minerals, plus l take “Rainbow Light” food based multivitamin for those over 50. I do take an extra vitamin D3 supplement too…and others like fish oil and flaxseed oil! Thanks for the help, Donna B.
Lynn Terry says
I would start by drinking chicken broth. I like it hot out of a mug – the Campbell’s condensed canned broth like you cook with is best. I mix it with 3/4 water instead of 1:1. The cramps are often because this is naturally a diuretic diet and the broth replaces electrolytes and sodium your body is losing.
Also, do NOT drink too much water. If your urine is clear – that is what’s flushing out your electrolytes & sodium. And make sure you are getting enough sodium. π The chicken broth is a quick fix either way.
Donna B. says
Funny thing…last night I had that antsy feeling of wanting to snack. I was completely full, so I didn’t want to give in to it…So just before bed I had a cup of the cube boullion (this was before I read your post) and I didn’t have those leg cramps last night! Maybe I am drinking too much water. Plus water, I’m drinking more herbal tea in the afternoon and evening just cause the weather is getting cooler and it’s a good way to warm up and not munch! Thanks Lynn
Lynn Terry says
The broth works wonders. π I find it kills cravings too, even sweet cravings, with a nice rich warm cup of broth. Great fix!
Definitely watch your water intake. You also get much of your water from foods high in water content. The key is the color of your urine. It should be pale yellow. Any lighter or clear, and you’re drinking too much. Any darker, and you should drink more. Simple as that. π

Thank you so much for taking the time to share what you are eating and your hikes!! They are such an encouragement! Well, I thought I was doing pretty good – I had a hard time getting under the 20 carbs a day and then I realized I had more in my liquid vitamins and liquid cholorphil. I’ve cut those out for a week now…and have added more oil. I couldn’t figure out how to get the fats up. I think a lot of my problem is the years of “go low fat”…I haven’t lost any weight yet…I’m bouncing between 230 and 232. Today I’m at 231.
I had a lapband put in…in 2014. At the beginning I was 299 and the summer before last I was at 204 and have gone up (obviously). I feel like my band is not working at all..as I’m never full/satisfied.. So, I’m excited to be on this new journey
Lynn Terry says
Hi Angela π What kind of foods are you eating? Use chicken thighs instead of breasts – they are higher fat, taste better AND they’re cheaper. Salmon instead of other white fish (which is just protein). Avocado is great – I like it salted & fried/browned in real butter. π Pecans are also a great healthy fat, and delicious!
Amy says
Down 4.8 since the 1st, but that’s more than it should be just because that was my bday weekend and I was a little lax … but feeling wonderful!! I had dinner w/ a girlfriend last night and was hoping it was so nice. We both got chicken Caesar salads and they were delicious. The friend I met was my best friend in kindergarten and although we have always still talked throughout the years we haven’t done anything for quite awhile. It feels so good to be reconnecting w/ dinner instead of drinks w/ these girlfriends. REAL conversations about REAL life…not shallow small talk.
I love using my Inner Guide planner … I had a goal for today of 157 and am excited to write 156.4 instead. Week by week…day by day π
Lynn Terry says
That’s awesome, Amy! Way to go, beating your goal. π π And kudos for reaching out and making those positive connections in your life with friendships & social depth! I’m doing the same thing, and having SO much fun. I realize now that I’ve isolated myself a lot this year, and it feels GOOD to get out and be ME. π Here’s to another great week!!
Sherry Smith says
Likely a dumb question, but what is a inner goal planner?
Amy says
Not a dumb question! Lynn turned me onto it and I love it!!!

Lynn Terry says
95 pounds lost?! Wow, Pam – way to go!! π π Those weeks on end where I don’t lose or just fluctuate are frustrating. My weight has been fluctuating up a few pounds lately too, but mine is from strenuous hikes – and muscle recovery. I’m okay with that. I am just happy not to be gaining weight like crazy, which is what happens if I go off plan. π
How are you tracking, by the way? There are a few things you could try…
Karen says
Hi Lynn, this is the very last post email I have received for the past 5 days, and also read in here, is something wrong? as I see that you are posting in facebook ok. Looking forward to more updates soon. Thanks. π

Keisha says
I joined a little behind schedule and I am just figuring everything out as far as the check-ins. Last week I weighed 378 this week 371. My heaviest was 420 and I did a LCHF WOE and got down to 335 so putting back on 43 lbs has me very depressed and I do not want to feel defeated. I am excited to be back on track and I will be cooking a good portion of Thanksgiving Dinner so I can stay on track. My dessert will be a chocolate cherry smoothie that I will make at home with unsweetened cocoa, frozen cherries, almond coconut milk, creamcheese, vanilla, bee pollen, and coconut oil.
I am so happy to see the numbers going back down and having company doing it!!
Sherry Smith says
Wow, great job! I don’t Want to be defeated this time either, one reason I decided to start before the holidays, so I wouldn’t gain another 20 lbs. Your dessert sounds great could you please share recipe? Have a great and Lchf holiday;)
Lynn Terry says
That’s awesome, Keisha π Congrats for taking control of your health and getting back on track with your goals!
I agree with Sherry, your dessert sounds amazingly delicious!
