I hope you had a fabulous low carb weekend! Monday’s are always great for a fresh start, and a fresh dose of motivation. 🙂
To give you some ideas for the week here are my low carb meals over the weekend, plus my MyFitnessPal food diaries so you can see how I logged them…
Saturday’s Low Carb Meals:
I got up Saturday morning and made Low Carb Blueberry Pancakes. 🙂
I used New Hope Mills Low Carb Pancake & Waffle Mix, cooked them crisp in real butter and also topped them with butter – plus Nature’s Hollow Sugar Free Maple Syrup.
They’re so buttery, crisp, fluffy and delicious! 🙂
A full batch makes two meals for me, so I had those for breakfast and lunch.
For dinner I made another Low Carb Grilled Cheese.
I used a full TBSP of real butter on each side, colby jack cheese cut off the block and two slices of Low Carb Everything Bread. It’s the BEST low carb bread, and only 1 net carb per slice.

Sunday’s Low Carb Meals:
I was busy on Sunday morning, and not in the mood to cook or make food, so I just had 1/2 cup (60 grams) of pecan halves for breakfast.
That comes to 2 net carbs and 93% healthy fat, plus 420 calories so they’re very filling. It’s a quick & easy meal, and a much healthier choice than a bar or shake…
That’s my handy little Ozeri digital kitchen scale. 😉
It was a beautiful afternoon so I decided to get out for a hike…
I passed a Hardee’s on the way, so I grabbed a low carb style Frisco Burger in a lettuce wrap and ate that at the park before my hike.
Hardee’s (aka Carl’s Jr) will make anything on the menu low carb for you!
For dinner I got take-out from Gondola Pizza & Steak House. It’s a Greek / Italian place, and one of my favorites! I ordered the Gondola Chicken which is smothered in bacon & cheese, with roasted broccoli & cauliflower and sautéed mushrooms.
Mushrooms are a great low carb source for potassium! The mushrooms were dripping in butter, and I dipped the smothered chicken in their house-made ranch…

My exercise was a fun afternoon hike at the Old Stone Fort Archaeological Park yesterday. I’d hiked it once before, but went back again because there is SO much more to discover there! This time I also did the “red trail” which was an absolutely beautiful riverside hike downstream from the Big Falls. 🙂
I didn’t get a chance to test out my new Action Camera on the hike yesterday because I was caught up in great conversation for most of the hike. I did get to do a little climbing & exploring though!
My hiking & adventure meetup groups are proving to be a great source for fun new things to do and interesting people. One of the guys in the group (Aaron) is an experienced backpacker & hiker, and shared tons of great camping gear tips with me for my first big overnight hiking adventure. 🙂
It’s been nice to mix up my low carb meals the last few days. I was craving something different.:) I have some low carb pasta to try this week too, and am planning to make another low carb veggie casserole.

Hi Lynn! Do you have any advice regarding emotional/stress eating? My daughter is a low carber, but despite not feeling hungry she’ll admit to me that she will still snack on peanut butter, cream cheese and nuts throughout the day. It’s her last year in high school so of course it’ll be stressful, but I wanted to see how I can help her. I know that this is a problem you’ve gotten over yourself, so you’re an experienced veteran with emotional eating π thanks in advance!

Getting more mindful period is such an empowering thing – from mindful eating, to making more mindful and deliberate choices and decisions throughout your life. π It’s a skill that will serve her well into adulthood!

You look so good, so healthy π Happy for you. I did pretty dang good over the weekend but still up a pound or so because I was not perfect. I expect to be down that pound in a day or two though since I know what causes that fluctuation and will be cutting it out. It’s going to be very cold her in WI soon and I’m wasting away the beautiful days without getting outside for hikes as well. I will regret it when I can’t do it…so I think I should get some planned for this week/weekend for sure. We had some people over for football yesterday and man…I was barely tempted but was still so proud of myself. The only cheat I did was having a small piece of a chicken tender. For dinner I made an amazing meatloaf, just cut out the breadcrumbs and replaced with more cheese and veggies…but I forgot to get my low carb marinara so that part of it ended up higher than it should have been.
Each day, we start anew. Happy Monday π

I’m up a couple pounds this morning too. I’m guessing from my big hike yesterday as that usually happens after strenuous exercise. Plus I should be having keto flu again this week so my body is in a transition at the moment.
I’m definitely trying to take advantage of the sunny days as much as possible, even though it’s A LOT cooler now… but I plan to hike through the winter this year. π I can’t wait to see snow framed waterfalls and icicles!!

I’m really struggling to get back on track. I had lost 75 lbs. on WOE until last June when my dad got really sick. That took many months of being in and out of hospital with him. Now I can’t seem to find my way back and have gained 1/2 the weight back. If you have any suggestions on how to get re-motivated I’m up for anything. Thank you.

I know how hard it can be when you have major life stress and emotions are running high. It’s easy to put yourself last, or put your own goals on the back burner.
That said, I find it really helps me to stay focused and stay centered when I’m taking care of myself – and feeling my best. I’m in better shape to deal with the things around me.

Ok-I’m dying everytime you share the picture of chicken from Gondola….I wish I could find a place that makes that meal. It looks soooo good. I love chicken, however my family won’t eat a chicken breast meal to save their soul….(burnt out from the years I was low fat) But even with more fat on it, they won’t touch it. My husband is also low fat still, and he hates chicken…..sigh. I’m still on track. This is my 3rd week (I think) the cravings are gone, and I’m back to no cravings! (Thank goodness) Now just gotta stay on track! π I’ve lost 8lbs this past 3 weeks, but of course it fluxuates…….Still weighing daily, but using my Monday’s as officicial weigh in days……

Lynn, I am so grateful you kept posting pictures from Gondola. My family and I went up to Pigeon Forge a few weeks ago, and I googled Gondola since I know you are not far away. There is one in Sevierville, and we ate there every day!! It was wonderful!! I went back two weeks after with and friend, and she and I also ate there! Thank you!! We’re ready to go again!!
