Here’s my complete low carb food diary for yesterday (Tuesday), which was all EASY meals that required ZERO cooking. 🙂
I mentioned that this would be a busy week, and full of appointments, so some days you just have to “grab and go” and still keep it healthy.
I had an easy meal at home, two quick low carb take-out meals, and a snack last night that really impressed me…
Tuesday’s Low Carb Meals:
I had my usual healthy low carb breakfast: 1/2 cup pecans, 1/4 cup Daisy brand cottage cheese, 4 small diced strawberries and 18 grams of hand-picked blueberries. (6 net carbs and 85% healthy fat)
Around lunch I was between appointments and errands, so I stopped through McDonald’s for “2 sausage patties and 2 found fried eggs please.”
I love their new All Day Breakfast options. 🙂
^ There were two of each, but the other sausage and egg were IN MY MOUTH while I was taking that picture, lol.
For dinner I grabbed a Caesar Salad from Applebee’s at their carside-to-go.
I got grilled salmon instead of chicken, because salmon is much healthier (healthy fats, magnesium, potassium, etc). Chicken breast is too lean, all protein. There’s a slight upcharge for the salmon switch, but it’s SO worth it! 🙂
I only ate the salmon for dinner, and saved the salad for today. In fact I’m eating it now, while I write to you.:)

After the grilled salmon, Slim and I took out for a fun walk. Then late last night I tried the Atkins bar I got in my October Keto Krate. I like the Peanut Butter Granola Atkins Bar best of the ones I’ve tried so far, but this one was GREAT!
It’s the Atkins Harvest Trail Dark Chocolate Sea Salt Caramel Bar. You know what impressed me about it most?! It had ZERO sugar alcohols! 🙂
Slim and I waited to get our walk in after it cooled off last night. We had great fun exploring downtown, and even ran into an old friend at the water fountain – where he likes to stop for a drink. 🙂
I added “housework” as part of my exercise for yesterday because I got in a lot of my Fitbit steps doing some organizing & rearranging around the house. With great music on of course! Today though, it’s back to arms & abs…

Hi Nicole π I’m not sure where you got that information or what type of low carb diet you are doing?

My scales finally moved today. Four mornings in a row they were the same. I figure even if I lose 4 lbs a month that’s still pretty good since I am never hungry! Thanks for your blog. I read and re-read your posts. It helps a lot when I get weak and want to eat sweets and chips!

I have tried the Atkins Trail Bars before and the first time I thought they were stale but they were the same the next time. Do you find them really hard to bite into and chew or is just me? I think I can find other things I’d rather spend 4 carbs on. My goal is to still lose 10 more lbs. but my scale went up a pound this week. It seems I can only loose 1 to1.5 lbs. a month. Since January I’ve only lost 12 lbs. but I’m ok as long as I can show a loss long term. It’s just the times when I go down a lb. for 3 weeks and then go up one for awhile that gets me down. I keep Fitness Pal and my macros look good to me. I set it up 5% Carbs, 20% protein, and 75% fat. and I usually am pretty close to those figures. Although with getting that much fat my calories seem high although with everything I read calories shouldn’t make a big difference. Mine are usually around 1600. I do 2 miles a day on my treadmill, sometimes I bike, and I belong to Curves for resistant exercise. At age 69 and with only 20 lbs. to loose when I started in January I’m wondering if I’m expecting too much too soon. When I started in January I was aiming for the 20# loss to be in a year but I only have less than 3 months and going like I am now I’m not going to make my goal. I started at 168 lbs. and now 9 mos. later I’m at 157.5. I’m 5ft.4in. and in April my BMI was 27.98 and in Sept it was 26.9. That seems like very slow progress to me especially since I’m always exercising. Any tips? FYI I have followed a Low Carb diet as a way of eating for over 20 years but by cheating a little now and then I have slowly added on a pound or so a year over those 20. I guess if took me 20 years to put it on it’s going to take a little longer to take off especially with my age! But I’m still going to keep at it.

The last 20’ish pounds are the most challenging! Given you didn’t make a dramatic lifestyle or diet change, you will lose weight slower than someone who gave up soda or just gave up bread & sugar. You’re in the same range as me – that home stretch. π

They always say the first things to cut are: nuts, cheese, cream cheese, artificial sweeteners, bars/shakes, and any processed foods.
Still, I think you’re doing fabulous! And obviously moving in the right direction. π

I just realized I forgot to respond about the Atkins Harvest Trail Bars. They are a more “hard” than others. My all time favorite Atkins bar is the Peanut Butter Granola Bar. But I loved that the one I had yesterday had ZERO sugar alcohol in it, and no icky fake chocolate taste. π
