You already know that I like to keep it simple, especially in the kitchen. I tend to make very easy low carb meals, and make them super quick. 😉
Even before I started the low carb diet, my mother called me a “canna cook”. A canna this and a canna that. LOL.
That’s not to say that I can’t put a decent meal on the table, but I’m no Betty Crocker. It’s pretty rare that you’ll find me making something from scratch. I have a busy lifestyle with a business to run, a house to keep, two kids to raise, and a lot of traveling – all on my own. I just don’t have the time OR the desire.
Here are some photos and quick details of things I ate this week, to give you some ideas for very easy low carb meals you can put together in very little time:
Very cheesy eggs with crumbled sausage:
The sausage was leftover from a Breakfast Burrito I made the day before (YUM!) with low carb tortillas, sour cream, shredded cheese, fried egg & sausage (this was really delicious!):
Turkey & colby jack cheese mini sandwiches (with mayo & dill pickle) using the easy low carb bread mix:
Hormel Turkey & Gravy (4 minutes in the microwave, 4 net carbs per serving – and delicious!) with sauteed baby bella mushrooms, squash & zucchini. I just cut the veggies and threw them all in a skillet with butter & a little soy sauce, and simmered until done. Served a romaine salad on the side tossed with Caesar dressing and parmesan cheese:
Take-out, grilled chicken salad. I don’t eat the tomatoes (by choice more than anything) and use my own low carb Caesar Dressing:
Throughout the week I munched on low carb sausage balls, almonds & string cheese, Quest bars, tuna salad & cubed colby jack cheese, Breyers CarbSmart ice cream bars, ate low carb at McDonalds, and had a Taco Salad from the local mexican restaurant (minus the taco of course).
I also made low carb fried squash, and had that with canned green beans and a slice of cooked ham (I often keep a half cooked ham in the refrigerator for easy low carb meals):
Doesn’t look like much food on that plate I know, but I did go back for seconds – AND I was saving room for one of my low carb dessert recipes 😉
