Day 15: Easy Low Carb Meals, NO Cooking & More Weight Loss!


 

Below is my Low Carb Food Diary for Day 15 of the Summer Low Carb Mini-Challenge so you can see what I ate and how the macros work out. Join in! I was NOT expecting this today.

I woke up this morning, stepped on the scales like I always do, and there it was:

139.8 pounds

I started this mini-challenge at 141.8 two weeks ago, so at 139.8 today that means I’ve lost a total of 2 pounds.

I’m averaging a pound a week of weight loss lately, very consistently. I consider this GREAT because of where I am, while others will most certainly experience more weight loss in the same amount of time. Why? Because I’ve been eating super low carb daily for more than 100 straight days, and because I’m so close to a goal weight.

The less you have to lose, the more challenging weight loss becomes. And I haven’t made any drastic changes to my diet like others did when they started the challenge.

Am I freaking out? Not as much as I expected I would. šŸ™‚ I honestly thought it was going to be harder, or take me longer, to get into the 130’s. It’s also way below my original goal weight. Although I realized when I got into the 140’s (my original goal) that my 43 year old body is NOT the same at this weight as my 29 year old body (duh, lol)… and that I had more body fat to lose than I realized.

We’ll talk about that more in a second. First, here are my low carb meals for yesterday. I share my own meals with you here every day to show you how EASY this is, and so you can see EXACTLY how I am losing weight so consistently…

I didn’t cook ONCE yesterday. šŸ™‚

Day 15: Tuesday’s Low Carb Meals

I had my favorite low carb breakfast: 1/2 cup pecans, 1/4 cup Daisy brand cottage cheese, 4 small diced strawberries & 1/8 cup (17.5 grams) of blueberries.

It came to 6 net carbs and 85% healthy fats.

I eat this breakfast almost every single day because it’s a VERY healthy combination of delicious foods, and because the macros are PERFECT.

For lunch I had a leftover take-out meal. On Sunday night I picked up two big take-out meals to last me a couple of days, which was a brilliant idea, lol.

This was a grilled chicken breast smothered with bacon and two cheeses, with roasted broccoli & cauliflower.

For dinner I went out and grabbed a Low Carb Burger from Hardee’s. I ordered the Frisco Burger “low carb style.” They have a “make low carb” button on the register, so you can order any sandwich and get it in a lettuce wrap.

So here it is. This is what I looked down at this morning:

Low Carb Weight Loss

 

I’ve had to remove my favorite rings, because they slide off my finger while I’m trying to type to you. None of my usual clothes fit anymore, so I ordered a few new things last week during the big summer clearance sale. I didn’t want to pay full price given I just ordered smaller shorts in early Spring and those no longer fit me anymore – at all. They are having an even bigger sale now so I’m tempted to get some smaller tanks & t-shirts and a few other items while they’re super cheap…

I can’t believe I made it to this point.

I know I’ve worked hard toward my goal, but mostly it just feels like I’ve been having fun and finally staying consistently VERY low carb. It’s not like I’ve been “totally consumed with dieting” or anything.

Getting this lean and feeling this great always seemed and felt like a purple unicorn. A goal, a dream, something I wanted, but something I often felt like I would NEVER achieve. There were many times I just took a day off, or a week, and curled up with a pint (or two) of ice cream and said “screw it.”

There were many times I said, “I’ll just try harder tomorrow.” FIVE YEARS worth of tomorrow’s went by. That’s what happens when you put things off until tomorrow.

I really struggled. I had to overcome my biggest demon: emotional eating. And I did. That alone is a bigger achievement to me than the weight loss itself.

I struggled with believing in myself, I struggled with self-sabotage and fear of success. Meaning: Who would I be if I weren’t struggling?!

Those are all very real issues, tough stuff. I get it. I’ve been through it all.

I still have a ways to go. I will stay on a ketogenic low carb diet for my health, to maintain my weight loss, and to stay out of chronic pain – which is something I dealt with for YEARS before going low carb.

I also still have a ways to go on toning. I’m 43 years old, and no matter how much weight I lose… this body needs some work. šŸ™‚ lol – some serious work!

    I’m so glad I found your blog. I’m an emotional eater and have gained 25lbs in a year. I want to lose the weight and feel good again but I just don’t know how to do it this time. I know I will eventually get there.

    GO GIRL!!!! I’m so happy for you! I can’t wait until I’m near my “goal” weight (I’ve still got a while to go). But I know persistence pays off and it definitely shows with your achievements. ā˜ŗ

    My meals yesterday.
    B: bpc, fried eggs w/bacon
    L: 2 Oscar Meyer smoked sausages, bbq pork rinds w/sour cream (as a dip)
    D: double cheeseburger w/o bun (cheese, pickle, bacon,mustard), small cesar salad, diet dr pepper can
    S: 2 Mozarrella cheese sticks, coffee

    Net carbs were 12. Fat was 80%, protein 18%, fat 2%.

      I miss my smoked sausages. The local grocery stopped carrying them. šŸ˜› Great job yesterday!! And thank you. šŸ™‚ It’s powering through the stalls, bad days, temptations, etc that has FINALLY worked for me!

        Lynn, our Kroger stopped carrying Oscar Meyer Smoked Sausages too, but I found them at Walmart. Maybe yours carries them too. I’d be lost without them.

    Hooray and congratulations on reaching the 130s, Lynn! What a HUGE accomplishment, especially overcoming emotional eating! Very proud of you and so appreciate your daily blogs. You keep it real, you keep it simple, and you are helping many of us achieve our goals while staying sane. It helps tremendously to know we aren’t alone in this quest. Thank you!

    I’ve done well during this challenge, remaining within a few pounds of my goal. I’ve been more dedicated to exercise and joined once-a-week hiking, Nordic pole walking, and Couch to 5K groups. For a gal who hated to sweat, I’m amazed at myself. Never, ever would I have imagined running. I doubt I’ve run since I reached my teen years except if required to do so in a gym class. The sense of accomplishment I feel at 69 years of age is thrilling and, for the first time in years, I’m actually proud of myself. Losing weight and being in control of my food monsters is so freeing!

    Even though I’ve been at goal for over a year, every meal is still a challenge. I’m contemplating lowering my goal by 5 pounds. If you feel you still need a lot of firming at 43, Lynn, you can guess how much I need at 69! Maybe, just maybe, 5 more pounds will help. My mid-section and arm “flags” are the worst. Yikes, they just don’t seem to decrease!

    Some of you may remember I had a sore swollen toe a couple weeks ago and was worried about gout. A blood test confirmed my uric acid was 4.5 and the normal range is 2.5-7.1 so I don’t have to worry about that anymore. Very relieved.

    Congrats again, Lynn, and thank you for being there for me. Thank you to everyone else who replies to Lynn. I look forward to reading your comments each morning and following your progress. I wish continued success for all of you.

I think the self confidence and being proud of yourself is such a natural HIGH. I had no idea it was going to feel this good! šŸ™‚

    You made such a good point… how being in control = freedom. It seems like an oxymoron, doesn’t it? But it’s not. I have experienced the same thing. “Freedom” made me feel OUT of control. Being IN control makes me feel totally FREE and crazy happy! šŸ™‚

    Congratulations! I’m hoping I get a break here soon myself.
    I have been consistent on my macros (70% / 25% / 5%) but have been holding at 130.2 for 3 weeks now. I did drop my exercise from 5 days a week to 3 due to being very busy with a project – but I am exercising including weights. I going to try to increase by fat by 5% to see if that makes a difference.

      Changing fat by 5% got me out of a stall. Go for it.

      Going to 75-80% fat has helped me break a stall in the past too. That and dropping carbs lower.

      Try eliminating: cheese, nuts, cream cheese, bars/shakes and any processed foods. Go super simple, 3 ingredients per plate max – just meat & greens w/healthy fats.

    Good for you! I am really struggling. My biggest issue is my mind. I overthink and self-sabotage. I start on the LCHF woe and after a few days I convince myself that I can’t eat like this for the rest of my life and jump on a new plan, follow that for a few days and convince myself it’s not working and I need to cut out carbs again. I bounce around from one diet to the next. I’m 130 pounds over weight. I am a stress eater…my daughter has had two double lung transplants in the last six years and I turn to food to cope with my fears of losing her. I feel completely out of control and can’t stick to anything. Not really sure how to work through the mind games and sabotaging and stay on track.

      Vickee, I so relate to you on overthinking, self-sabotage, stress eating, and not sticking with things. Been there, done that! I can only imagine the fear you have of losing your dautghter, and I’m so sorry both of you are dealing with that. As far as sticking with LCHF, may I make a suggestion? How about committing to one meal at a time? Make a pact with yourself to stick with it for breakfast. After you have that under control, add lunch, then dinner. It’s hard. I have to ask myself every time I want to eat something, “Is eating this worth the lousy way I’ll feel afterward?” Sometimes stopping and thinking before I mindlessly stuff food in my mouth is all it takes to stay on track. After you’ve been on track for a week, you’ll be amazed how much better you feel–physically and emotionally. Food had such a hold on me that I had no self-confidence, was constantly depressed, and saw no hope. I stayed home and avoided people because I was so embarrassed. Now that I’ve lost 74 lbs. and kept it off a year, I’m never home! I think you’ll be amazed at the change in your mindset. It won’t solve all your problems, but you’ll feel in control of at least that part of your life. It’s a constant struggle, but oh so worth it. Good luck, Vickee!       Just take it a day at a time. You have to try to tell yourself that you can do this woe day to day, then week to week. Before you know it, the months go by and the change in your weight and how you look and feel will be motivation to keep going on. That is what i did. I look back and wonder how i really lost over 100 lbs in 2 years and the key is consistency day in and day out. I have had slip ups and off plan foods but i do not sabotage myself anymore and say….i will start Monday. Well many a mondays came and went and there never was a right day to begin. I just brush myself off and say to myself…. ok. I had ice cream one time today but that does not mean i have to go on a binge the rest of the day
      this is Not easy. In fact, it is the hardest thing i ever had to do but the lchf diet has been the most painless way to go because if you go into ketosis and stay low carb those cravings start to fade and so does the unsatiable hunger that goes with eating high sugar and high carb.
      Emotional eating is hard to conquer but if you are not constantly hungry it gets a lot easier to handle.
      find an outlet for your emotions when you are depressed or worried about your daughter. Join a gym or a water aeribics class or just take a brisk walk to clear your mind. Try yoga or meditation or even prayer if you believe in God.
      Your daughter needs you to be strong and healthy for her and most of all you have to do it for YOU…..
      i am talking to myself and giving reaffirmation to myself on things i need to do and reinforce in my life as i am writing this to you.
      Vickee…..there are so many wonderful low carb foods now and recipes so you won’t feel deprived on this woe
      i had low carb toast this week with cream cheese and SF jelly. I was happy….:)
      I know now that i CAN do this for the rest of my life.
      I still have another 20lb to go or maybe more but that is my goal for now
      i will be praying for your daughter.
      i am not trying to preach to anyone but i know how hard this is and just want to help others because i feel like i got my life back finally at 60. It is such a great feeling better than any candy can make you feel
      do not give up. I did not think it was possible 3 years ago….. but wow….my life has changed so much. It. CAN be done.
      Be consistent…….that is the secret!

      Good advice already. I’ll just add this thought to consider: Has food alleviated those fears for you yet? Is it working? If not, it’s time to realize that and find something else to turn to. šŸ™‚

      The first week of low carb is the hardest – for all of us. But after that you have very little appetite, hardly any cravings (really just mental if at all) and your taste buds even totally change.

      It IS sustainable too. I’m 5 1/2 years in. šŸ™‚

    Big Congratz, Lynn!!! My weigh-in did not go so well, but I have many NSVs and I can honestly say I’m okay with it this time. It’s taken me 2 years to drop 40 pounds so I can wait a little longer. I know what needs tweaking and I’m doing it.

    Once you reach your goal how do you plan to adjust your carb intake? I am just curious how a person goes about doing that.

      Great question Cyndy!

      I have been eating 20 net carbs a day for more than 5 years now (except the times I was off track, obviously lol). I plan to continue eating a ketogenic low carb diet – staying at 20-30 net carbs / 70% fat – both to maintain my weight loss, but also to continue staying out of chronic pain. And because it’s good for my health! My blood pressure, blood sugar, cholesterol, etc is all perfect. šŸ™‚

      I don’t think I have something you don’t. I’ve been very weak, in so many ways – not just about food/eating. I’ve had to overcome A LOT to try to get where I want to be in life. I’m fighting every single struggle toward becoming the happiest, healthiest version of myself – which includes my weight and health, but everything else too.

      Some days are harder than others. I write about those tough days pretty openly here. I struggle just like everyone else.

      I think it was more a matter of having some “straight talk” with myself and realizing all the lies I told myself for so many years… were just that. Like that ice cream would make me feel better. It never did. It only made me feel worse. Facing those “head games” down was a big battle.

        I’m very emotional today, and more than ever need the support of this group to stay strong and healthy … mind and body. I keep self sabotaging. I have been struggling the last few days to stay happy while staying strict to the diet…I know it’s not the diet that’s making me as depressed as I feel, and heck, I know it’s not a diet too…I’m depressed for other reasons and like you’ve said before…this is the ONE THING I can truly control right now. Myself. I can only control me. Life is going to keep throwing things at us but this ONE THING….I have to remain in as much control of as I can. Being disappointed in myself for my drinking just continues the cycle. I’d like to think that I can be in control of that too…and I’m trying. Sorry, I hate having any negative vibes coming from my direction. Just really struggling to keep my head happy today and my thoughts positive. Again, I’m so grateful for you, this group and for everyone in the group….we are all trying to be the best version of ourselves (I love that saying by the way, I remember listening to a book on tape about it but I can’t remember which one that was…).           On top of all that whining, I really have been very good about the 20g a day, just a bit over in calories on the days I let myself have cocktails. Trying to figure out what exercises I can start doing to get up earlier and start the day off right. I need a good quick work out video.

          You’re not alone. I spent most of Tuesday of this week in the bed. A couple of hours in the afternoon was just to curl up and block out the rest of the world. šŸ˜› Life is tough sometimes, and those bad days SUCK.

          Whatever is really bothering you… food, alcohol, etc won’t fix it, and won’t help. You already know that. Heck, I know that too. Why are those the first things we turn to? I think out of habit, because we both know it only makes things worse (or makes me FEEL worse).

          Whatever is going on, focus on solutions. How can you fix it. Or how can you get through it? How can you feel better in THIS moment? If there’s nothing you can do about it, accept that, and do something else that IS positive.

          I find when I’m really upset or angry or whatever, sweating it out helps. I’ll pound it out on the pavement with a fast-paced walk, or do a high intensity home workout. That never FEELS like a good idea, or I don’t FEEL like doing it, but it makes me feel SO much better when I force myself to do it.

            Thank you Lynn. I truly feel myself trying to speak to, well, myself lol…I know that I need to get working out and it will help ease this anxious crappy feeling i have everyday. No excuses….after work I need to make myself sweat. No walking with the boyfriend and his dog….just go somewhere that I can make myself run or do SOMETHING to sweat it out…I have a feeling it will involved some tears and that’s ok…that’s what needs to come out of me besides sweat! When I can save a little $$ I’m going to buy that T25 work out , thank you for the suggestion. I have a couple videos I can use til then to get me by, unless I get the YouTube hooked up to the tv first. THANK YOU

            That’s what I’ve done too. Sweat it out, cry it out, whatever it takes. I feel SO much better after pounding it out.

            And yeah, I like going alone too. Or with my great dane. He doesn’t judge me, lol.

    Hi Lynn, do you think it is best to stay toward the low end of fat intake (meaning sticking as close to 70% and not really going over) since you want your body to burn your body fat and not mostly the fat in diet? I’ve read to try to not go too crazy with the fat intake if this is the goal (but making sure it is definitely not a low fat diet, of course). Sometimes I am at 65% 30% 5% and wonder if this is wise or if on those days I should up the fat more. I just want body fat burn. What are your thoughts?

    Congrats on the loss! I’m down 12 lbs in two weeks. Now I assume I will settle down more slowly. Thank you!

      Wow Kate – congrats on losing 12 pounds in such short time!! šŸ™‚ And yes, it’s common to experience a “hold” or even slight fluctuations for a week or two after such fast weight loss. When that happens just keep doing exactly what you did the first two weeks. Stay consistent and ride it out. Know that it’s totally normal and it’s just your body adjusting to such a big loss.

      I actually lose weight faster when I eat higher fat: 75-80%. šŸ™‚ It’s a cool science!

    Words cannot express how much this entire post speaks to me Lynn..I struggle every single day with the “tomorrow” I will begin and stay on track which it seems like every single time by Wednesday I fall of and it turns into “i’ll start on Monday”…its such a viscous cycle and its saddening to me…I want so badly to stay on track and be where you are now!! I absolutely find your blog posts so relate-able and encouraging..I am 45 and will be 46 in November.I don’t want to live like this anymore…the purple unicorn comment was sooo true!!! It does seem like that for me!! Sometimes I think getting to where I want to be is so unattainable? Should I just give up and deal with where I am now? I certainly don’t want to…not happy in the least with where I am..thank you for all your time and effort you put into this blog of yours.. I am grateful to have this blog as a reference..

      You said it already: You are not happy where you are. So take the steps to be somewhere else. Don’t stay where you aren’t your best self! Do it every day, every meal, make YOU (your happiness, health, well being) the top priority.

      Being miserable is miserable. Stop doing things that make you feel miserable. I feel happy and excited and hopeful for the first time in SO long. I want you to feel that too!! šŸ™‚

    Congrats, that is fantastic. I have been 100% on plan since July 5th and the scale is being stubborn. I can see the inches leaving me, but the scale won’t cooperate. I took the batteries out 3x this morning and reinserted only to come up with 3 different weights. The most frustrating part is my husband is boasting a 5 pound loss, (I’m making him do this with me). I gave up alcohol, he has not, yet has lost 5 pounds, REALLY??? He’s so annoying.

    I am so happy for you LYN!!! I KNOW how exciting it is to fall into a new lower decade on the scale. It feels so incredible doesn’t it? I cannot even imagine how i will feel to get close to my goal weight. I know now, that it CAN happen. You are proof of that
    Right now, I just have to take it one day at a time and to power through the temptations, stalls and emotional stuff we all go through
    I think excercise helps to lose inches and to sculpt our bodies to a new shape by gaining muscle. And when we gain muscle it revs up our metabolism and helps us burn calories faster
    Excercise in itself is not going to burn all our calories we injest. But 20 minutes of constant excercise can increase our metabolism and put us in fat burning mode provided we stay low carb
    i have never been able to lose much weight by excercise alone either. I only lose by eating low carb or very low carb—keto
    Of course there is a science to this as described in Atkins book.
    all these gimmicks: various diet pill supplements….all claim that these are miracle weight loss pills— it’s all a scam
    i tried them all. I tried every diet and the ONLY thing that EVER worked was the low carb diet or i prefer to call it a way of eating. Diet is a four letter word. Lol. šŸ™‚

      i understand emotional eating but i have been having a problem more with eating out of boredome
      when i keep busy sometimes i even skip meals but not on purpose
      but when i am here alone at night i start thinking……What can i eat for a snack…..Confession…..i had four sf popsicles. A yogurt and almonds later. Another sf popsicle……i thought i was hungry but i realise now that i was just bored…..bored watching the same old TV shows and playing games on my computer
      i need to be doing something constructive with my time like writing my poetry again……at least i can pin point my problem now
      even though i eat low carb snacks …..all those carbs add up……:(

This way when I get to a stall, I can lower the carbs here and there. I’m feeling wonderful! Getting in some walks here and there, (usually 2 to 3 times a week) too. =)

    I’m going to be starting my strength workouts, weights, res bands, etc next week.

    I want to lose about 65 pounds more by April of 2017. All girls cruise for an incentive! I’m at 197.8 now.

    I stayed with my sister for 5 days….had to take her to a medical procedure and just stayed for a few more days to make it like a mini-vacation. I DID NOT gain, however, did not lose either. Which is a good thing! And we had a great time. <3

    Breakfast: Your cottage cheese cereal, only I top it with a little bit of SF, dry, cherry jello
    Lunch: Yogurt and some rinds…(I know the yogurt is most of my carbs for the day. šŸ˜‰
    Dinner: Bacon, eggs, and a few mixed nuts.

    The toning will be the most challenging! lol

    i was just thinking of that today. What event could i focus on to be in great shape for……There is a cruise that i wiuld like to attend in Feb. 2017 there is also a cruise in 2018 that i have to be on….:)
    of course i have to save up to go on either one but i missed two cruises that i really really wanted to attend because of my weight and money too
    You got to be careful with cruises. Thise all you can eat 24 hour Buffets are a killer
    This will give me something to work towards…..looking great foe my cruises. That would be GREAT incentive for me
    i had a friend stay with me for four days last month
    we went out to eat every day…..cause neither of us wanted to cook
    but just because i was eating out dud not mean i had to go off plan
    my friend does not do low carb so i had to watch her eating chocolate cake and icecream for desert. I refused to indulge. “Just this once” or ” you don’t do this everyday” are things my mind tells me. I have to turn off those old mind games i play with myself and i powered through the temptations to eat things i shouldn’t in a social situation.
    Eating out used to be a trigger for me to induldge on decadent deserts or carb rich meals.. ….i am learning to eat wisely when out now and to pick low carb foods. This is a small nsv for me. šŸ™‚

      I think it’s a GREAT nsv. šŸ™‚ I actually love eating out because there are SO many beautiful low carb options to enjoy. And I don’t have to cook or do the dishes šŸ˜› lol.

      I had Mexican today, and the food across the table from me actually ruined my appetite for my own beautiful low carb plate. I brought it home in a to go box and finished it at home later. šŸ™‚ lol…

    Hello, congratulations!!! I’m so happy for you. I have been doing keto for 17 days now. I’m not getting on the scale , just going by how my clothes fit and pictures. I definitely have lost weight. A pair of pants that didn’t fit , fit now !!! I also started my period two days ago and usually the day before and the first day of my period I have horrible cramps. Well I don’t have any cramps at all ! I’m amazed. Has anyone experienced this to?

      You may not know how much weight you’ve lost, but here’s a fact that could be contributing to what you experienced: Women store estrogen in their midsection fat (belly & hips). When you start losing that fat rapidly, it decreases many hormonal & cycle symptoms. This is why girls that train hard in gymnastics don’t even get periods.

    Congratulations on getting the 130’s. I feel that way about the 140’s. I’ve been bouncing between 151-152 for over a week, all the while staying very true to under 20 total carbs, but it’s so frustrating. Sometimes it feels like my body just does not want to give it up. I’m now only 5’2.5 (just had a bone scan and lost some height) so I really need to be in the 130’s or even less. I should still be losing. And I DO NOT CHEAT! EVER! But I’m 65, and I think you still have age on your side. I think the older you get the harder it is for your body to let go of the weight. I don’t know, does that sound credible?

      I am not sure i believe in the ‘age thing’ anymore with regards to weight loss
      True i lost faster in my twenties but i proved to myself that age is no excuse anymore. I lost 157 lbs in my sixties and only losing slower now cause i am getting closer to my goal weight
      i do not believe in carb cycling so much but i do cycle my calories to get my weight loss boosted at times along with intermittent fasting. I rarely do the IF though
      Lyn has given some good tips about getting through stalls. Try the 3IMAX. That really works for me….
      keeping it simple. 3 ingredients max. Meat and greens. I know if i give up my nuts and dairy i could lose faster again but i love my low carb cereal every day but i may have to give up nuts again to jump start my weight loss again and maybe dairy too.

      I shrunk 2 1/2 inches in my 30’s – from 5’7″ to now 5’4.5″ – such an odd thing. And why my body doesn’t feel the same at weights in my late 20’s I suppose.

      Anyway, my scales go a week or two at a time without moving, or fluctuating up a bit and a bit more then back. I average a pound a week of weight loss, but it’s not every week.

      I would just stick it out. If you want to test some things, cut: nuts, cheese, cream cheese, bars/shakes and any processed foods. And as Gina pointed out, 3IMAX is great for breaking stalls!
