Day 68: Low Carb Challenge Food Diary


 

 

Here is my Low Carb Food Diary for Day 68 of the “Get Lean For Summer!” 90 Day Low Carb Challenge. It’s NEVER too late to join if you haven’t already!


 

There are only 22 days left in this challenge. Can you believe it?! This 90 day challenge is really flying by…

That motivates me to HIT IT HARD these last three weeks! 🙂

I got a cool package in the mail this week, and I also went to the grocery store yesterday to stock up on my favorite low carb staples, so I’ll share both of those things with you today – along with my super easy meals from yesterday. No cooking involved!! lol…

Day 68: Friday’s Low Carb Meals

I got a cool package from Atkins as their ‪#AtkinsSpringFling‬ winner last week. 🙂 I have the original Atkins book but they sent me The NEW Atkins Made Easy book.

I haven’t read this one yet – have you??

These are the Cashew Trail Mix bars they sent me. It was good, a nice salty/sweet combo, but small and 6 net carbs…

I had some errands to run around lunchtime so I grabbed a Low Carb Thickburger from Hardee’s. I ordered it plain with cheese, mayo & tomato. It came to 1 net carb and 77% fat – and delicious. 🙂

For dinner I made my favorite “low carb cereal” with 1/2 cup pecan pieces, 1/4 cup Daisy brand cottage cheese and 4 small diced strawberries.

It comes to 5 net carbs and 85% healthy fats:

I was planning to have some cream cheese & raspberries last night, and even pulled the berries out to thaw – but I was too tired to eat 😛 so I just saved it for this morning. I was slightly hungry, but just went to bed.

While I was running errands yesterday I stopped by the local grocery and stocked up on my usual low carb staples: frozen strawberries, bottled water, pecans, almonds, sausage, cheese, butter, cottage cheese, cream cheese, coffee, creamer.

I already had eggs, frozen berries (blueberries, raspberries, blackberries), spinach, almond meal, etc at home.

I’m disappointed I didn’t get my workout in yesterday…

I’ll definitely get it in today!

Oh, and tomorrow (Sunday, June 12th) is Peanut Butter Cookie Day. I have a simple recipe for low carb peanut butter cookies if you’re in the mood! I think I’ll make some myself. That sounds delicious. 🙂

      But there is no such thing as “no carbs” green smoothies… Green veggies have carbs, the good kind though! 🙂 How are you tracking??
